Never had one processed there myself but know several that like Ye-ol-butcher shop in Plano.

Non. I do my own. That way I know I get my deer and all my meat back.. if you are just worried about getting your deer back i hard Cinnamon Creek by Cablas is good.

Find one that doesn't weigh your meat. Non. I do my own. That way I know I get my deer and all my meat back.. if you are just worried about getting your deer back i hard Cinnamon Creek by Cablas is good. Same here. And I dont weigh before I start processing

Never had one processed there myself but know several that like Ye-ol-butcher shop in Plano. I know they used to process and when they did they were good. Might call and see if they still do. Past three deer I've had done at Rockwall Deer Processing. Clean, efficient. Lots of options, good sausages.

I have used Ye Ole Butcher shop. Good guys and good product but they do not (or did not when I last used them) skin the animals you have to have them skinned, quartered and coolered.
FYI - side note, their pork breakfast sausage is some of the best in north TX.

I hear Ye Ol Butcher shop had to stop processing deer so be sure and call and yes you have to take quartered in ice chest.
Cinnamon Creek has some good flavors but get very backed up, long waits until ready for pickup and I question if you get your own deer meat back. they are a large commercial operation and work by 'pre weight'.

I like Kuby's but i don't know that you are getting your own meat back. Butchermans in Royce City does 1-deer at a time and you get your meat back. You have to take it in 1/4 up as they do not skin.

The one in my kitchen! He takes very good care of our stuff, and we know 100% that we always get only our meat back. His sausage stuffing skills could use some work though.

Hopkins County Food Locker in Sulphur Springs, bring in whole and skinning is included in processing fee. Meat is vacuum packed. Sausage is great. And you get your deer back!

My neighbor down the street is the only one I trust, but he no longer is taking on new customers. He's even whittled down the list of old customers to a bare minimum.

I've had the basic product from Kuby's off a buddy's deer and it was subpar, maybe an anomaly situation based on all the kudos for it on here. Conversely, the bacon wrapped venison filets from Cinnamon Creek are maybe the best venison product I've ever had in 45+ years of eating venison. These are the only compares I have had, Kuby's ring sausage vs Cinnamon Creek's venison filets;.

Thanks for all the suggestions, I head on good accord HUnters Choice in Sanger is great. I did mine when I was young but learned 1. you need a BIG space with tables, bus tubs, SHARP, quality boning knives 2. a Great meat grinder, NOT a hand crank made in the 40's The Outpost does mine now and I believe you get your own meat back, NOW If they would just finish my Fallow Buck I dropped off LAST NOVEMBER Think I'll make the drive back to Caleb at Trophy Case Taxi !!!

I use Kuby’s for my jalapeño cheese summer sausage, it is very good! I was told by several people who work there that you get your own meat back.

Hirsch in Plano.. Only take them quartered in a cooler... Only way to get your meat back....They will customize you beef to pork ratio on sausages...seasonings etc...if they carry a type of sausage in their retail case they will make it for you....I always ask to have them smoke it a bit heavier than their standard.....

We have a cooler at the lease. So we typically let them hang a couple days before taking them to the processor. No need to quarter in that example...and the processor doesn’t charge much extra to skin them. Not worth dulling my knife for anyway. Buzz - I bet your fallow is gone. That’s WAY to long to be waiting on meat.

I know a lot f people say they get their own deer back at Kubys but I aint so sure about that. Last deer I took there was probably 15 years ago. I had basic processing done and they weighed it when I brought it in. If you are getting your deer back there is no reason to weigh it because you can only get what is on your deer back and it doesn't matter if its 5 pounds or 500 pounds you can only get whats there to begin with.. When a place weighs the deer its usually so you get a percentage back minus bones and hide weight.
And for those of you getting smoked sausages, I don't care where you take it there is next to zero chance you are getting your own meat back with that. If you have ever seen how they smoke that stuff then you know what I mean.

I know Rust at the Rust Game Place and a Granzin at Granzin's Meat Market. Together these processors get in and handle somewhere around 15,000 deer a year. It could be even more. They get to put up with all kinds of "stuff". Besides the gut shot crap and filth in which people bring in their animals, one of their biggest problems manifests itself when a hunter brings in a doe with 40 pounds of flesh on it and expects, 50 rings of sausage, a couple of bags of buck sticks, some salami, back strap steaks and more. They need to weigh deer to in order to provide themselves a defense when unrealistic expectations are exposed upon delivering the final product.
