I tried something different this weekend that worked out really well. I used Crystal's hot sauce as a binder for my salt and pepper. Bark was better than usual, so I'm going to do it again to see if I can duplicate.

I wrapped in butcher paper around hour 7. Cook was about 13-14 hours.

What grade of meat, choice? Prime. Plenty of great briskets come from choice. Put I’ve had some bad ones too. Prime tends to keep some consistency.
