My FIL likes "medium well" I don't think ive ever seen him cut into a steak and be happy with how it was cooked. Those kind of folks need to cook their own steak and not rely on the cooks to ruin it for them.

That's a good looking ribeye but it's just a little too rare for me. You can always fix an undercooked steak, overcooked is a lost cause.

I was in college before I had my first rare steak. We raised our own beef when I was growing up. My momma chicken friedT-bones.

Couple years back during the drought and the big beef sell off, H-E-B had prime ribeyes and NY strips for 9.99/lb. I had the butcher cut me 5 lbs of each in 1/4 to 1/3in cuts and chicken fried them all. Best chicken fried steak ever.

I would say that steak is definitely not rare. That is a perfectly cooked medium rare steak. I would say it's closer to medium than it is rare.

I believe the reason people order steaks at restaurants and are never happy with them is because most people have a different idea of what rare, medium and well done are. Some people like it bleu but they don’t know what that is.

People started a trend on medium rare plus several years ago. The trend didn't last long.

Could use a little better sear. Between medium and medium rare. A little over cooked for me but it looks good.

I agree Chris, that steak wasn’t cooked hot enough. That’s an issue in my eyes with a pellet grill.

For what it is worth I took those steaks off at 135 so it should have inches up towards 140 which is right in the middle of medium/medium rare.

My daddy would look at my steaks and say, "Son, I've seen cows burnt worse than that and live through it!" Never could get him to get anything better than medium-rare.

Never try to tell a guy how to eat a steak. If your dad thinks it tastes unbelievable; then so what. Personally, I don’t like it when I see that “jelly” like center, but to each his own.

Some people like it bleu but they don’t know what that is. I agree that most people don't know what finish they actually like, but I'm in the other direction. Most people think their steaks are under-cooked, rather than over-cooked. That's the fault of most chain steak houses over-cooking steaks. The steak in this post is definitely not rare. It's medium rare pushing a little closer to medium in my opinion. He even said it was cooked to 135°F. I you go back and look at the picture a good 25% of the steaks is gray on top and bottom and pretty red in the middle. Although, some of it could just be the lighting in the picture. Steakhouses are dark so steaks look less gray and more red. Perfect are according to Angus Meats Perfect medium rare according to Angus Meats Perfect Medium according to Angus Meats

I prefer my steak Black & Blue, but will only order that at fine steak establishments as most places don’t care for the meat properly. If cooking at home, we go hot & fast. 800+ degrees for 45-60 seconds per side and call it done.
I love the flavor of charcoal, but just can’t get enough heat for my steaks, I cook them in the direct flame when using coal.
