seems this method is hot right now

slice onions VERY thin on a Mandolin

grill them then place burger "ball" on the onions, cover with a piece of parchment paper and MASH it all flat.

They're copying the Oklahoma onion burger. been around since the depression and are one of the best you'll ever eat.

For your CenTex tour, previously mentioned Horny Toad in Cranfills Gap is darn good. Waco has a few great old school burger joints -- Cupps, Dubl R, Dave's, Christie's... Kitok's egg burger with Oriental fries is another good play.

Inspired by TEXASLEFTY I had lunch at the Horny Toad Bar & Grill in Cranfills Gap. Asked the waitress/bartender Susan what is the best burger y'all are know for, she said the Danwich cheeseburger, so thats what I got on regular bun.

It was a good burger that was a little over cooked, nothing to brag about or go out of your way for. Onion rings were okay good, like frozen ones they pour out of a package and into the grease.
Did try a French Fry and it was the best tasting thing that I had there.

Stub, you sure have a passion for eating at and critiquing restaurant cuisines, have you ever thought of doing it for a living, if not just a fun podcast? "Stub's Kitchen Tales" or something similar....

My poor wife says the same thing about my critiquing dang near everything I eat.

DQ so many times people brag about places and when you go there, to many times it does not live up to the hype or ones expectations.
People get all wrapped up in the Nostalgia of a neat looking place, especially one that has an old western look like the Horny Toad. They could eat a chit sandwich and tell everyone how good the food was so they don't go against the grain of all of the other peeps or peers that praised the place before.
Like the Horny Toad, neat place, my hamburger was good but nothing to brag about and I would eat there again if I was hungry and just happened to be in that area.
Side note: If I ate there again and ordered another burger it would be just a regular cheeseburger with fries and have it cooked medium rare.

Another example is the Greenwood Saloon in Bluff Dale, neat looking bar and outdoor setup,
I have been there at least 5 times, the last time was 7 or 8 years ago. It was fun the first time, the second time the novelty of a cool looking saloon wore off pretty quick
Only once was the band worth listening to, back then a beer was almost $5.00 a bottle, Juke box was $1.00 a song, the place felt like an over priced tourist trap for what they were charging.

I think a lot of people that rave about this restaurant or that burger joint set the bar to low based on their own poor cooking skills or laziness. They are judging the food based on their own cooking skills or lack thereof. It`s not often that we eat out and I leave thinking that was an awesome meal. Most are average or below. Some are well below like the Beehive in Abilene that we tried last year. People also judge the food along with the eating out experience or atmosphere. Probably why all the food I ever had at Hooters has been great. My wife and family all say I`m a picky eater because I rarely leave any eatery thinking that was great food. I don`t think I`m picky at all, I just know that I can usually fix it much better and never have to leave the house. No brag, just fact.

BTW my post is not a knock on TEXASLEFTY's post or palate, he has recommended several places to me that were spot on so I trust his judgement !!!!

The gal I mentioned Susan was the only one waiting on everyone in the whole place and it got pretty busy.
So it might have been one of those times where the food is usually really good, they were just having a bad day because of being short staffed.

This right here.

This could be true, but many times it is the IN-consistency of the restaurant to blame. I have had great meals at places, while others have had less than stellar experiences......and vice-versa.

You are correct. We`ve been going to Mary`s cafe for over 30 years and I quit ordering CFS years ago because of the lack of consistency. The Mexican food is very consistent, so I order it. Most times I just never go back after a few bad meals.

For just flat out meat flavor on a very well made hamburger, you would be hard pressed to beat a Sky Rocket hamburger, they are made with some brisket meat mixed in.
You can have fresh or grilled onions and Jalapenos added on at no extra charge!!

They now have many locations across the metroplex, we get ours at the Frankford Rd. at Coit Rd. just south of George Bush.

Stub, I had to be in Dallas Monday and stopped at the Frisco location. It is a very good burger. I've been to the Frankford location too and they are consistently good. They have kraft sodas at the Frisco spot. Chips instead of fries???

Burger looks way good, the fries look tasty also. It is neat to stop in cool out of the way spots and get some good grub!
