I am having these for supper tonight and only made them once before. Don`t remember if I posted or not so may be a repost.
I do not like egg whites in Deviled Eggs, so I substituted Jalapenos for the egg white.

6 boiled egg yolks
5-6 Jalapenos - Cut in half and deseeded
4 strips of bacon . Fried and chopped into small pieces. (reserve half and sprinkle on top)
2 slices chopped Onion (finely chopped).
5 Tbls. Mayonnaise
1 Tbls. Mustard
1 good squeeze from a fresh lemon
Salt and Pepper o taste.
Sprinkle paprika on top

You my friend are onto something. I�m adopting and developing that idea further. I suggest adding a hearty dollop of prepared horseradish, the coarse kind. That will light up the egg yolks. The next thing to try will be adding crab meat to the mix. Crab goes great in a jap.

Did you cook the Jalapenos in the oven before you put the stuffing in them, if so how long what temperature.

The jalapenos were not cooked at all. They were deseeded and washed thoroughly.

Dang crunchy deviled jalapenos! I'd have to roast them a bit to soften them up, I like fresh jalapenos, but diced up on my tacos, etc.

If you want to roast the japs, flip them over and put them under a broiler to just crisp the skin. But I would leave them crispy crunchy.

Thought I revive this old post. Lots of folks making deviled eggs this time of year. I`m not a fan of the boiled egg white part, but I really like the egg yolk mixture. Putting the yolk mixture in a Jalapeno is just the ticket.

My mother made deviled eggs every holiday and even had a special milk glass platter for them.

Looks delicious. I do a similar one, where I dice the jalepenos into the mixture and pack into large pasta shells.

If you really want to play in the kitchen...

Simply cook your large shells al dente, then fill with refried beans, taco meat, chees and bake in the oven. Mexican, instead of Italian!!!
