The deer I’ve seen this year in cen tx have been fatter than I’ve seen before. The last one had such a nice layer of caul fat that I almost grabbed it for some meatballs. Rinella had a cooking episode where h e wrapped it around some meatballs and it got crispy like skin on chicken or duck. Gonna try that next time.
