you sure that isn't a nutra rat?
Could be, but nutria are really good BBQed since they are vegetarian and don't anything but. It's funny what you can do with 5 armadillos and the same amount of nutria for a graduation party!! Everyone cleaned it up and wanted more or the seasoning until I told them where I got them. Half were amazed, the others lost their meal! All psychological...
Dang right, feral hogs of any size are good eating, except for the boars in rut, nope, not doing it. Proper game care goes a long ways on how it'll taste!

thats sounds just like something I had a guy tell me at the lease...you sure you're not from LA.
Most of them handled properly do taste ok, then again I have ran across some that will make you want to burn down a smoke house because it gets rank. On the other hand, a lot of ppl don't know how to take care of them and will drop them off in the processors cooler after hours; that will get you a cussin'.

I definitely second the ice bath approach. To me its like aging beef.
I had a few folks suggest the ice bath / drain the blood out suggestion, but Kuby's recommended not to bleed it too much, or it would dry out the meat and it would not be as juicy...
The three little hogs I shot last month are alot better than the larger sow I killed in 2008. Not really from a taste perspective but from a leaner animal - there was ALOT less fat on the 50-65#ish hogs...

I've tried it both ways, and I'll stick with the ice bath.
As far as the fat content, that also depends a lot on diet. Had some really chubby young piglets, and had some 80# sows that would have gone 120# with a little lard on them. Our pigs had lots of fat after last year's rain, but gave a good bit back over the drought. The fattest feral hog I've taken is still extra lean compared to a farm raised hog.

Just like a cat fish, the bigger they are the nastier they are. Seems like they just get greasier. They make for good sausage meat, but not good smokin meat in my opinion. In fact I would like to get a 150 lb hog to make some sausage out of this weekend.

You can eat any size hog.Preperation is the main thing.Ate them up to 515lbs.and never a gamey taste.Have heard about folks eating bigger hogs and tasted bad but always wondered what they do wrong.Kill the hog, hang by head not back legs because if you accidently hit the wrong thing with the knife you are ok cause it dont run through the meat.Skin the hog and rinse good, take another knife and procede gutting very carefully, once gutted look in side cavity for marble size glands and cut out.Rinse good and put in ice for three days and drain water each day.Fourth day pull out of cooler and clean cooler and merinate and use your rub, wrap with aluminim fiol very tight.Cover with ice and drain for two or three days till you are ready to bar b q or cook.Cook 275 degrees till done. This is my way may not be everyones way but works for me.
You must have an industrial ice machine....

Any size is good eating, no game taste. Just soak in ice water 3-6 days draining each day and you can't tell the difference, if there is any to begin with. Shooting them in the head doesn't hert either.

Dont mess with skinning or gutting them, just split down the back, take the backstraps out, pull the hams, and dump the rest......shoot some more and repeat.

In my opinion it not completely the size that makes them no good. I shoot hogs regularly because they have overran our farm and the only ones i ever clean weigh between 90-150 lbs, but I have killed bigger and cleaned bigger. What I have noticed is that the big boars(200+) lbs stink very bad when you kill them and most of the time they have worms, and that is IMO where the "bad" meat you hear about comes from.

Could be,I have killed alot of hogs and never saw worms but i have never had a bad tasteing one either.Often wondered what really made them bad,Still think the prep work goes a long ways also.
