Opa's without a doubt. I have better luck finding it at Brookshire's than anywhere else I've tried.

Windthorst, TX meat market....they make a raw, jap/cheddar sausage that is outstanding. The United in Wichita Falls also carries some in the display case.

Fischer's: you can get jalapeno and cheese german, jalapeno and cheese brats , jalapeno taco links, or jalapeno and cheese summer sausage and probably a few more made right there. Smoked and vac sealed.

I am a big fan of Fischers, friend of mine gifted me some and I liked it so much I drove to Muenster and picked up a little more than 10 lbs of it. I broke one of the big packs of 20 down into smaller packs, gave a 4 pack to a neighbor and his 72 year old wife called me and said it was the best sausage they ever had and they both had Orgass eating them

I spotted those the other day at brookshires and remembered them being mentioned somewhere. Fischer's and Green's (when we get down that way) are our favorites.

Count me down as another fan of Opa's. Our local grocery carries it and it is very good. For something that I can't get at my local store, I always pick up some jalapeño cheese sausage from Slovacek's when I am passing through West.

The thing I like about the Windthorst sausage is that it's raw and is not the typical fatty, smoked link. You can buy it linked, or in a big roll. The roll is super easy to throw on the grill and turn instead of having to jack with each individual link. Comparing it to a smoked link is not apples to apples imo. I have never made it for anyone who didn't care for it. Grew up 15 minutes from there. Give it a try.

I'm a big fan of Opa's for store-bought. United in Lubbock will mark them down to $5 every so often and I'll load up.

Opa's is by far the best from what you can buy in a grocery store with out having to go out of your way and buy in bulk.

Praseks is good. Currently cooking some.

Where are you from? I grew up in Scotland and hadn't been inside the meat plant in a while. Stopped there this year and seems like a lot less than what they use to carry. Hard to beat good German sausage though and what he made out of the deer I dropped was good stuff. Fishers is a good product also.

I think that they do not keep much on display anymore, but can still make whatever you want.

Opa's is solid. But Kuby's in Dallas in unbeatable. You can buy jal/cheese sausage at their store or they will process your deer and make some. It's the best.

Love me some Opa's and Fischer's. Also try Fischer's cheeses - my favorite is the 'smoked hot pepper' (smoked pepper jack). So great!

New Braunfels Smokehouse makes some killer sausages. I like Opas for all the time and it's easy to get at HEB.

Good stuff. Best one I've tried sold at retail level. First choice is 'Kenny Fred's deer processing in Bluff Dale.

I went and bought the Opahs. Everyone on my lease loved it, including myself.

Based on this thread, i tried the opa's jalapeno cheese summer sausage and thought it was terrible. Had a real tangy taste to it. oh well.

In about an hour, we will be leaving Hurst and heading to Conroe to buy about 40 pounds of sausage from a place called Quality Processing. I agree that Opas is good but this stuff is a lot better. Best I’ve ever eaten.

I can tell you what to NOT buy. The Earl Campbell’s jalapeño and cheese smoked sausage is awful, but it is about the best catfish bait I know of.

I feel his entire line of sausage is terrible, even drunk in college it was terrible.

only way I found to fix Earl's, was to over cook it to where the skins split and let some of the grease out onto hot coals causing a flare up to scorch the outside a bit (and get rid of some of that grease). Even then, there are a lot better options out there.

Went by there to have lunch today based on this post. I *HATE* that I've lived in D/FW this long without knowing about this place. I'm a huge fan of Opa's, but this was better.

I love those places. We have siegi's in Tulsa. So dang good.

I had my deer processed at Fischer’s this year. Had 20lbs of smoked jalapeño cheese sausage made and it’s not edible. The rest of the meat tastes great, so I don’t understand the bad sausage

You talking about the regular smoked German sausage right? Not the summer sausage. I am not a big fan of their smoked German so I don't get any. Plus they require 20 lbs now. I get mine done at Kubys now but I love all other sasauge and products of Fischers. Their jalapeno cheese summer is as good as Kubys.

I’ve had Southside and Opa’s, both very good store bought but nothing compares to good venison/pork Jap & cheese sausage. My plan is to try to wind up with 100 lbs. of sausage after processing and around 20 lbs. of chili meat. That’ll last me a couple of years.
