I don't think he is talking about the white fat but rather the yellow something on top of it and no, I don't recall ever seeing anything like that. It will be interesting to hear what the experts say.

Wondering the same thing, never seen it before until about two weeks ago when a guy on our lease shot one. Found 2 spots on the buck's back that looked like this. Same thing, no obvious old wound, no smell or anything, we just cut it out while quartering it up. But still wondering what it could be.

Maybe GMO corn changes the color of the lactic acid and adrenaline.

I would say you somehow let the tarsal gland leak onto the meat, but surely you would have smelled that? Mystery to me...

Here’s What Causes that Nasty Yellow Fat in a Deer’s Body According to Etter, a deer’s sex, age and physical condition closer to winter are the three biggest factors affecting fat coloration. Yearling deer — both bucks and does — that are in good condition typically display the almost pure-white fat that’s commonly seen by hunters who butcher their deer in October and November. Fawns, especially later in the season, will often display yellowish fat layers.
Older bucks are more likely to exhibit fat that’s a deeper shade of yellow — and even reddish in some cases. Fat starts turning color when it is being metabolized.
T.P. Kistner of the Oregon Department of Fish and Wildlife was one of the first researchers to document the physiology of deer-fat deposits in deer when he authored the manual “Technique for Evaluating Physical Condition in Deer” in 1980. His studies concluded that deer fat turns white when it forms and is stored on a deer’s muscle tissue and around the heart, liver and other internal organs.

I've seen numerous bucks with that tinge to them. I just assumed that older deer acquired that coloring in their at as they aged.

I've seen yellow fat before, but this looks like a translucent yellow gel on top of the white fat. Maybe it just appears that way.

The fat on that deer looks normal to me....the yellow looks to be something else. Not sure what it is but don't look anything like any fat that I've ever seen.

The fat on that deer looks normal to me....the yellow looks to be something else. Not sure what it is but don't look anything like any fat that I've ever seen. x2

How far did the deer run after the shot? Was it chasing or being chased? I've seen rutted up and stressed deer look like that once in a while.
Sometimes it's hard being me! But somebody has to do it.

My son shot an old buck about 8 years ago. It had that yellow, jello looking slime around its neck. He probably ran 15 yards after the shot. His neck was swollen though. We washed it off and used the meat. No smell either. It does gross you out a little.

If it will wash off, I would keep it if there is no odor. Otherwise just cut it off.

I have seen that yellow slim before. Most of the time it is post rut on bucks that have been fighting. I've found it around wounds that look to be infected. Maybe just cut it off? I would not eat the meat from the area where it cam from, but that's just me.
