This has been a big hit at my house so far...
Take 2 good size zucchini, slice 1\4" thick and lay in a baking dish. Mix in a little mozzarella and cover with marinara. Cover with mozzarella and sprinkle on an Italian herb mix. Bake at 450 for 20-30 minutes.

I grill the zucchini first, as this will get rid of some moisture. Tried it your way first and it was a bit watery.
