Found this bad boy at an estate sale this weekend. 5/16" thick and is one heavy chopper. I'm going to clean it up some and put a new handle on it. I've got no idea how old it is, but it's old.

Mike, I found one of those about 25 years ago. Like yours, it's pretty pitted but that old steel sharpens beautifully. So far, I think I've used it once.

Do any of you knife men ever test the metal to see what it compares to today? I'm not very knowledgeable about steel but I know there are different grades/hardness. Just wondered if there is a way to do that.

I can tell you how hard a piece of metal is. I have a Rockwell hardness tester in the shop and check all of my blades. Once right after heat treating and again after the tempering is done. There's no way to be absolutely certain what type of steel an item is without sending it to a metallurgy lab.
Cleavers as a rule aren't very hard and really don't need to be. If they were as hard a knife blade the edge would most likely chip when chopping through bone.
