Ok, this is nonsense, they are delicious if done right and in the right recipe. Don't try to use chicken recipes for them, the meat is more like beef. So I usually make a stew (mushroom barley or something similar). Brown the meat in butter and onions, add a bit of worschter sauce or vinegar, and most important a cube of that gelatin beef broth but with no water. Brown everything up in that mixture, then add veggies or potato or a mushroom barley soup mix or something and then add water. People will love it and think it is elk or something. I serve alot of wild game and my family and friends never know and eat alot and they get fooled by goose most times. If you marinate it, think beef again. The coarse texture is great and flavors mild, and get that meat off the breast asap and on ice.

They taste like liver and blood if they're not prepared properly. Taste a little better than nutria if they are. Brined for Days beat with a meat tenderizer fried with a good batter is about the only way I've been able to eat any goose. I'm sure kubys could make you some sausage out of them though.

Marinated and then FULLY wrapped in bacon, smoked for a few hours, and they are WONDERFUL. Then throw the goose away and eat the bacon.....

LOL, I was thinking about hiring a guide and going to chase them but if they are not worth eating, I think I will skip... I absolutely love Canadians, they are my favorite waterfowl but I don't want to shoot something that I won't eat. These are breast fillets that I pan seared and am getting ready to finish in the oven with a Cabernet wine sauce (I use the outback steakhouse lamb recipe)... Makes me hungry thinking about it... looking good

Seems crazy to me the people who love duck but for some reason hate snow geese? Cook it right and it's great!
