 I have a couple questions for a gun smith

I recently got a stoeger longfowler sxs shoots 3in is it possible to polish or ream the barrel to shoot 3 1/2?

Possible, probably not. Practical or safe, no.
3" is fine. Get good 3" shells & don't worry about it.

What about polishing so the shells slide out easily after shooting?

Bad idea. If you want a 3 1/2" gun, get a 3 1/2" gun.
Sell the gun that you have to someone who will appreciate it.

There are no double barrel sxs that shoot 3.5 or I'd have it I've checked this is the problem

Maybe there's a good reason for that.
So - get something besides a SxS, if you've just gotta shoot 3.5's.
Several folks here have given you good advice. - Take it or leave it.

Not all double guns are created equal. You have differences between quality of the steel, heat treatment or lack thereof, differences in wall thickness of the barrels in certain areas, weight differences, different types and numbers of locking mechanisms, different levels of fitting between the action and barrels that may or may not keep them on-face longer, so on.
I'm sorry, but a Stoeger just isn't a gun I would take chances with. If you want a double that shoots 3 1/2" shells save up for a Citori or Cynergy that is already built to take the additional pressure, case thrust, and recoil forces. Not to mention lengthening the chambers in a gun will void any warranty, so now your pushing limits and have relinquished any liability and warranty given with a modern gun.
I agree with people above, 3 1/2" shells just aren't necessary when you can get quality 3" shells.
Polishing the chamber to a high degree will have a barely noticeable difference on extraction when dealing with slippery plastic hulls. Rifle cases which also deal with more expansion and contraction is where you'll see a difference. If you are having extraction issues there is something else at play.

And yet somehow people kill geese with sub gauges. I question the ethical hunting practices of anyone who claims a 3 1/2" shell is an ABSOLUTE necessity for anything but maybe Sandhills cranes. Even then o know people who hunt them with sub gauges at close ranges. Maybe not take long shots!
Someone comes and asks a gunsmith about a question regarding double guns, I answer it based off my knowledge coming from being one of the few people in the USA capable of building doubles from scratch, then get called arrogant in the process because you disagree or don't like my advice. Whatever...

I will respect TDK's information on SXS guns any day.
As for 3.5 inch being that much better than 3 inch or even 2 3/4 inch shells the only time I see that as being the case is if you are shooting long range at geese or sandhill cranes. It should not take but a few shells to fill out a limit on any waterfowl except snow geese. For sandhill crane I like the heavy shot turkey loads #6 works well breaking their neck just like it does for turkey necks. Speaking of heavy shot, when I was goose hunting a lot the 2 3/4 #2s were just as effective or more so than the 3.5 inch steel BBs or BBBs. Just observations of my experience hunting geese. Oh if one is sky busting they are not hunting IMO, your mileage may vary

I don't know why anyone would ever buy a gun that they wouldn't love and appreciate the way that it is. It saddens me that a new gun would be neglected and abused by an ungrateful owner.
