Not in my area but Griffith's Taxidermy and Deer Processing in Burnet, TX is the best processor I have ever used. You get your deer, not someone elses. They hang and age the deer before butchering. Cleanest processing operation in Texas.

Cleanest processing operation in Texas. I'll agree with you and their dry sausage is some of the best I have ever eaten. They just priced me out of using them several years back. I switched to Brizendine's in Bertram and have been very pleased and their dried sausage is pretty good too.

Wesley is a home grown guy that I highly recommend you folks give a try. Wesley's brother in law was a partner in Mills County Meat Company (locker plant) for several years but sold out to his partner in recent times. This gave Wesley his opportunity to start his business.

If you hunt in south central Oklahoma there is H&L Processing out side of Coalgate. Prices were great and gary knocked out my deer and hog in couple hours. Regular processing is $60 which is cuts tenderized and grind what you want, no upcharge for sausage.

Anyone have any information on Delk Processing North of Abilene? They would be really handy for me to use but I am not a big fan of dropping one off and hoping. They don't have a website or anything so I dont know what services they offer.Any info good or bad would be appreciated.

Hey psycho0819,
We have a lease in San Saba and have used Hibler's. What's your opinion on Hibler's? Honestly, I don't care for it much. The facility seems a bit nasty looking. The summer sausage isn't that great either.
If the weather permits, I usually take my deer to Fischers in Muenster, but during warm days I just run them over to Hibler's simply because it's only a 15 minute drive from our lease.
Do you know where the next closest processor is near San Saba, beside Hibler's?
Thanks in advance for your help. Wesley Head's Wild Game Processing is open in Goldthwaite. We are on the hill on Hwy 84 just before the FM 2005 Hamilton turnoff. We'd be happy to help you out!

I've used them twice and was really impressed. I felt like it was actually my meat I got back.

We've used them since they opened 5-6 yrs ago. Have no complaints. We process 4-5 deer a season.

I like J&R in Hubbard Texas. Top-quality work, very, very clean, but not cheap! I've spent a bunch of money there, but their stuff is just so much better.

Do they just do basic processing or do the do sausage or anything else? Thanks for the info. I was starting to wonder how they were in business if no one used them!

They do it all. I'm usually cautious of some processors summer sausage but theirs was pretty good, they only make it in the big donkey D size though.... I prefer the smaller rolls of summer sausage.

I used Maxwells smoke house in Crosby last year and was really impressed fast turnaround and everything was vacuum packed and marked well and it's nice to know the deer I brought wasn't mixed with anyone else's. I'll use them again if I get one this year.
