Feral pork is THE BEST eating IMO if you learn how to get it done. I just made a batch of smoked sausage from domestic pork (pork butts). I could DEFINITELY tell the difference, and too dang greasy for me. Flavor wasn't even close to the feral pork sausage that I usually make, cut with just the right amount of bacon ends & pieces. I can't count the number of times that I cook feral pork and folks are slappin' their lips..."MAN that's good" bla bla...then I tell them it is feral pork prepared and cooked with love. After that statement some of the slickers look at me like I'm feeding them cat. Good lord, shut up & eat. If it's good, eat it. I'm cooking a big breakfast at 5 AM for the crew Monday morning. There will be (in crock pots) HOT pork, MILD pork, smoked sausage, and chorizo & eggs. All homemade. Toasting torts with all of the fixings. Lots of taco action, it's gonna be good.
