Well, I don't want to pat ourselves on the back by any means however, I'm very excited to open back up my dads meat plant that he had open for so many years. In march we reopened dads plant J&S meat processing in Fairfield Tx and I am very thankful that between my dad and the head meat cutter that worked for him for so many years we have got all his old recipes back that we earned so many awards in the past. Getting the recipes back wasn't easy due to my dad having dementia but with everyone's help were on track and looking forward to an awesome deer season and growing back to the business it once was. Also they make some really unique stuff I have never seen anywhere else with Kangaroo, Alligator etc. no bs its gooood stuff . . .

Hunters near Brenham Lake Somerville area here, i'd go with Rau's in Brenham TX. They do my sausage when we debone any deer! straight forward, timely, very satisfied with results...... 5 yrs using them....... All other meats we do ourselves. Smoke sausage is A OK!!!!

We used ya'll this past weekend. Dropped off two does Saturday evening late in the night drop. And I stopped by around noon time on Sunday dropping off another doe. I am horrible with names, but one of the guys there walked me thru their entire facility and it is very clean and very nice! I also tried a couple of samples of jerky and buck sticks/slim jims (not sure what J&S called them) and both had a very good flavor. I bought some jalapeno and cheese summer sausage but haven't had a chance to try it yet. Very easy to get in and out of even if pulling a trailer. Takes major credit cards. Also has various meats/sausages for sale up front in the meat market.
as a suggestion, installing a light by the log book would be nice but I guess everyone has a phone these days with a built in flashlight.
I'll be back for sure ... maybe even this coming weekend depending on how the hunting goes.

A new shop opened up on the hill on HWY 84 about 1-2 miles east of the Polaris dealer. We got to tour it the other day and he was explicit that when they process, it's one deer at a time and you'll be getting your deer back. I don't have results to share as they are brand-new. However, I have known Wesley for a long time and I believe he is trustworthy. $80 for a WT, including de-boning and tenderizing the steaks. They are already taking game whereas the other locker won't until the rifle opener.

I saw that place Saturday. Had a few pickups and a few deer on rack. Does he make jerky and jalapeņo cheese summer sausage? Hard to beat Whaley's processing Hamilton when it comes to jerky!

Mills County Locker - I think they've slowed down, but for a while they were killing several hundred goats/sheep a week. They have a competitor now in that market, but the third company doesn't do deer.
