The processor is very important to things as well as how you prep.

I do the ice drain for 4-5 days before I drop off (keep full ice, drain the melted a few times day)

Gemsbok = oryx = axis = red stag > whitetail > bison > elk

Nilgai is special, it literally tastes like HEB tenderloin steaks - its not wild game tasting at all

Worst = anything from a bad processor, there are sooooo many.
