The processor is very important to things as well as how you prep.
I do the ice drain for 4-5 days before I drop off (keep full ice, drain the melted a few times day)
Gemsbok = oryx = axis = red stag > whitetail > bison > elk
Nilgai is special, it literally tastes like HEB tenderloin steaks - its not wild game tasting at all
Worst = anything from a bad processor, there are sooooo many.

Shot an oryx last year and the steaks, jerky and sausage were unbelievably great. Was just wondering about other options... Based on that picture I'm thinking you shot that in Port-aux-Français?
