Ellis County Taxidermy and Processing. Brian Vitovsky
Used him for 2 deer this year. Not cheap but he makes the best deer sausages I've ever had.

I have been using Kuby's for years. I tried Rockwall Deer Processors this year. I had smoked links, breakfast sausage, & slim Jim's made. Slim Jim's are good and I hate greasy store bought ones. I think I even like better than Kubys hunter sticks. I hope the other stuff is as good.

Kuby's is okay, they do not vacuum pack the meat and I am not sure I am getting my deer. Last year when I dropped my deer off they told me 6 weeks, 9 days later they call and say my orders ready I have a vacuum machine and actually prefer to do my own in size I want. Rockwall did like 8 per pack. That is too many.

great breakfast sausage. Way too much garlic in smoked links. You will be still tasting them the next day.

I hunt in Hico, live in Cleburne. The guys on our place used to swear by the processor in a Hico until he closes down. If it's hot, we'll take deer to Hamilton Quality Meats. It's average. Good sausage and good prices. However we prefer Uncle George's in Glen Rose (great snack sticks) or Joshua Deer Processing in Joshua. Tim Bruce does a great job, great turn around, and fair prices. Also next door to the taxidermist if we shoot a quality buck.

Anybody have recommendations in the Beeville/Kenedy area?
