I did a quick search and Taylor Meat didn't show as being listed already. They are a small processor in the Austin area. They claim to keep track of your deer when they process. I was happy with the three deer they processed for my family last year. They do a variety of sausage as well as ground, chops, roasts, etc. I thought prices were reasonable.

I have been using Cherokee Deer Processing in Maydelle, Tx. and the summer sausage is the best I've ever had made.

Syracuse (roanoke) has the best hot link around.

And you can't beat Kuby's (Dallas) price for grind.

Mike & Eds in Cross Plains. Just a few miles from my lease and they make the most amazing Jalapeno and Cheese sausage. The hamburger is available with bacon and jalapeno mixed in mmmmmmm time to hit the deep freezer.

I can think of more that I would not recommend! For me, the deer drop off needs to be reasonably clean, the interior needs to be clean, and the finished product needs to be good. Also, I must get my own deer back! In general, Ive had bad luck around the eastern Parker County area (except Dan's Smokehouse). When Dan's took a hiatus from deer processing a few years back to concentrate on jerky (great jerky), I bounced from processor to processor not happy with any. Now I use Stephens out of Abilene. Clean place, personable owner, and love the finished product. I also take 3-4 deer there for hunters for hungry each year. Others I recommend are Kuby's (used them for years when I lived in Dallas), and of course Syracuse (Never processed my own but have a couple friends that trade with me every year to try new stuff).

Svehlak Deer Processing, Ennis, TX, just a couple miles east of I-45 on Hwy 34. They do a great job. I've used them for years. Only open in deer season. They don't process hogs. They keep the place very clean, and they don't do 'batch' processing.

I plan to use Caddo Packing in Marshall for the first time this year? I am hoping for a good result. I used to have a private processor, he retired, I liked him because we discussed weight and what I could expect to get and he was always very close.
I have had friends shorted badly by processors, watched them argue to get it right, that sucks after a good harvest.

I've had great results for both...But, Kenny Freds in Bluff Dale is close to home, and they do a great job. Fair price and top quality.

Anyone have any info on Hunters Creek processing North of Seward Junction on Hwy 183 north of Liberty Hill? I process my own deer but have heard they have great service and some of the best summer sausage in the CENTEX are. Looking to get some summer sausage made this year.
