i am curious...any of yall ever use Wilson County Wild Game Processing in La Vernia? Just dropped off a bunch of deer that my family and i have been meaning to turn in to sausage for them to make into sausage, summer sausage and pan sausage. Just curious what people think of them.

Been happy with Johnny's meat market in south Austin. Going to try hunters creek in Seward junction.
I do most of of it myself but I don't want to make sausage
Going to bring them deboned meat, they charge 3.50 a pound (with pork added) and no extra if you want to add jalapeņo and cheese. An no extra fees.
Others have wanted to charge from 20-30 on top of the sausage price, even if already deboned and trimmed.
They also don't have minimums So you can get 10 lbs of one recipe, 20 of another, whatever. I like being able to sample different type.
It sucks to pickup $200 worth of sausage and not like it.

Midway Deer Processing in Katy,Tx make some dam goood Smoked and Jalapeno/Cheese Smoked Sausage.It has a real good texture to it.

Wild Country in Lindsay,TX. I used to go Fischer's. Long lines,bad service, and bad processing turned me off. Wild country has great service, good processing and they make snack sticks(hard to find). Their summer sausage is out of this world. It has big chunks of cheese , jalp peppers and whole black pepper corns in it!Check them out Montague co!

Not a favorite, just a warning. Don't ever use Greak's Smokehouse in Alvin unless you have tons of cash to blow. His prices are ridiculous! There are "hidden fees" that you wouldn't think to ask about because most processors don't use the same practices. I picked up a small deer that was quartered but not deboned and he wanted to charge me $338 for pan and smoked sausage. When asked about the price he quickly adjusted but was still expensive.

Any good ones in the Marshall/Longview area? I have used Bill's Meat Market in Carthage for a pig and a doe and the end product was very good/bordering on excellent (the pan sausage from both animals is some of the best I have ever had) but they tend to screw up the orders. Both times I ordered link sausage only to get home and look in my cooler, and not see any, which is my fault for not checking until I get home, 30 miles away. Anyway, I am looking for a meat processor to try my next animal.

Guys I only read about 3 pages on this thread. I have seen some post with "I think I got my deer back" and 'not sure if I got my deer back"....let me enlighten you. Unless your taking your deer to a small proccesser that you can watch and get feed back from other hunters....you are not getting your deer back. You MAY get the chops back but any and all sausage, burger, jerkey etc. you are getting back at most 10% and thats pushing it! As long as the butcher removes the bad deer and does things in a clean manner its no big deal but remember....your deer is mixed with all the other deer and some filler beef so orders can be filled.

Not that impressed with Hunter's Creek in Liberty Hill Breakfast sausage was ordered "hot" but was rather bland, had to add salt/pepper/garlic to wake it.. That could be just personal taste of course..
The smoked sausage was a "Chipolte cheese" mix as they were out of their regular Jalapeno for Jalapeno/cheese. No one liked the taste (again, could be personal) but the casing was the toughest I have ever experienced..
The jalapeno/cheese summer sausage was decent but a little bland.
Not trying to bash the guy just sharing my experience.

Owens in Ballinger. Excellent service and superior product. I had a bunch of summer sausage made and gave it to my customers for Christmas. Everyone likes it. Have had them do just about everything and it's all been great.

Ray's supermarket in Breckenridge, Tx does my work....they have always given me back MY DEER ONLY....yeah right....let's be real here unless you stand there and watch them you are hardly ever gonna get your own deer back. Rays does do an excellent job of giving you back a representative weight of the deer you brought in however. that's why they continually get my business.
