I'm not sure you could pick a bad one, but I'd go with the 7-08. Plenty of reach for longish shots but won't blow away shoulders on the shorter ones.
If you want something done, tell a Texan its impossible

Just to make sure that it is done thoroughly, I go both ways.

I really hate to do what I am about to do, because it will be very painful for you.

I love shooting my model 70 .270 But it is a toss up between the .257 mag and the .25/06.
I leaned toward the .257 but its just soooooo expensive to shoot.
I really need to get the setup and have someone show me how to reload........ But that's another thread

300 blk out for anything in Texas for me. After shooting 270 Win for years, some 300 Win Mag, and a lot of 308, I'm sold on the blk out. In a Rem Model 7 rifle, it is a very handy package, and quiet, too!

I've taken deer in the hill country with .257 bob, 8mm mauser, .308 and .45-70. My inlaws have used 7mm-08, .30-06, .270, and .280. They all worked. Can't say one was better than the other.

I have used everything from a 222-375 H&H but mostly for about 20 plus years of cull shooting I used 22-250,270,308 mostly in that order. They all worked fine on our local goats. If recoil sensitive and you are a fair shot and use handloads and premium bullets I'd say go with an accurate 22-250, if not try a .308.

+1 for 7mm-08 - great for Texas deer & hogs.
Make your firstshot count!

I'm a fan of the .270 personally, but as was said before, there is no wrong answer. You like what you like.

I use the same calibers no matter where I hunt and for some strange reason the all have Weatherby at the end.
Yes! A Weatherby does kill them deader.

.243 in a good ruger or old 700 is all you need.
my son dropped a big ten point with .204
these days, i'd take a well placed shot over larger caliber any time.

I've been fortunate enough to hunt in several parts of the country and I believe cartridge choice in the Hill Country is less important than in the other parts I've hunted.
Because ranges are rarely more than 150 yards (at least in my experience), muzzle velocities over around 2800 fps are not needed. And since I've never been a big fan of cartridges under .264, this is why I like the 7-08 so much.
However, I admit that a .260, 6.5x55, 7x57, or .308 would be just as good. It's good to have choices
