Texas boy - Re: processors around Brownwood. For years I used the one at 405 and 183. Some guy named Ted ran it. This year I took my deer in and it was completely changed. Now called Lone Star and has a Taxidermy and processor. I don't know how their products are, but they are real nice folks.

Hunters Creek Processing in Liberty Hill. Hudson's on South Congress in Austin is good as well, but I think Hunters Creek is worth the drive.

Can you recommend a processor off 45 between Huntsville and Spring?
Thanks.
Also, do any double as taxidermists or do you process and then bring hide/mount to a nearby taxidermist? Fisher Ham and Meat is in Spring on Spring Cypress about 2 miles west of 45. They do great work and one of the guys makes GREAT boudin, if you like that.

As always, excellent quality. I think their prices are very reasonable for the broader Austin metro and they have a wide variety of options (including awesome venison tamales). My family loves the smoked sausage, especially the chipotle version. I've been using those guys for 3+ years and have had them process WT, hogs and blacbuck, and I've always been a satisfied customer.

Tried Fortsons (used to be fultons) in waco this year just to try somewheres different, turnaround on my meat was super fast but I am fairly sure I did not get MY deer back, no one does smoked sausage that quick. I still prefer R&R in west and will continue to use them in the future. Fortsons product was good, not great but good, I would give them a B or B+.

In Houston, I've used B&W meat market on Shepherd - they did a good job. Sausage was excellent and they gave an option to add 10% pork fat to the ground. They did make me mad not too long ago and so I've started using Midway in Katy, TX. Great options and flavor for sausage. I'm a fan so far!
