Willie's Deer Processing. 531 West College, Mason, TX 76856. Phone: 325-347-5168 & 325-347-2397. Based on my experience, they've been fast, quality & affordable.

Skelnarik's in Miles, TX. Great jalapeno sausage and deer snacks that are better than slim jims.

Kuby's by far is the best.. This season I took two deer to Syracuse and 3 to Kuby's.... Syracuse shorted me for two years in a row now and their product was okay to average in some cases overspiced - but Kubys was excellent and the service is great and the price is right!

I was recently given some backstrap, bacon wrapped filets from Syracuse and they were unbelievable. Close to taste of beef filets which shocked me...

Used J4D when I was in Copperas Cove. He and his wife are great folks.

Kornegay Deer processing, Meat Market & Deli
3902 N Main Street
Cleburne, TX 76033-7759

Not sure if someone has mentioned before but the absolute best sausage (breakfast & link) I have ever had was done by Mr Kornegay. Deer and/or hog.

Kuby's. Here is one of the reviews that I agree with:

"You can find other processors in and around the metroplex that are cheaper but from my experience none that are better or offer more variety of sausage.
Besides sausage Kuby's will cut steaks, filets, and just about any cut that you would like as well as offering tenderizing. They also does a great job of making ground venison/elk, etc with the option of adding 5% beef fat or not. All of the sausage is pre-cooked except the breakfast sausage and the Italian Sausage. The standouts for me are the Bratwurst (Go figure them being German), The Hunter Sticks, and the Jalapeno / Cheese Salami. Kuby's does do jerkey however don't expect typical thin type beef jerkey... this is really thick and slightly peppered. I have taken many different types of game and have never had an issue. The only thing that comes to mind as a minus is that they used to offer tamales as an option (deer season only) however as of this year it is no longer offered."
