One of my favorites to date, is a tree branch shoved thru a hotdog cooked over an open fire.

Wrap a vidalia onion in foil and place it in the coals. Put that on your hotdog.

field&stream ran a few articles about cooking trout on cedar planks. The trout was cooked skin side to the plank, leaned next to a fire where the fish was getting licked by the flames. The skin held the meat of the fish, but easily let it go when put to a fork. The cedar gave the fish a nice aroma, and best part of all was that there was no dishes to clean!

Good size campfire in a keyhole shape, a piece of old grate, a medium cast iron frying pan, dutch oven, an old enamel coffee pot and you can cook just about anything your heart desires.
The best treat I ever had was put together by my Aunt while on a Colorado/New Mexico mountain vacation when I was 8 years old. She whipped up some raspberry dumplings made with hand picked berries and bisquick strips cooked in a dutch over sitting in the coals. Thanks for the recipe, I will give that a shot! I don't know how much water & sugar she used. I was too young to ask but old enough to know it was durn good......

My favorite is dove - salt and pepper on the outside, stuffed with potatos cut into 1/5" cubes and mixed with butter and parsley, wrapped with bacon, wrapped with aluminum foil, set in the coals at the edge of the fire.

I was stationed in Germany during the Nam era. Me and a couple of buddies longed for the outdoors, and took off in our VW when we got a few days off. We ended up in Switzerland one time, and camped out by a crystal clear stream. I caught some trout out of the stream and we cooked them over an open fire with sticks. I don't know if it was the trout or just being in the outdoors that made them so good. We didn't speak that language, didn't know who's land we were on, and certainly didn't have any fishing license. . . . just having a good time.

I believe any fish cooked on a stick over an open fire would be incredible! I'm looking forward to cooking a couple more fish this year.
