I use one a lot. I have more fun just trying new things out, than I do following someone else's recipe. One of my favorites is a chicken and italian sausage paella. It never turns out exactly the same, because I just season to taste and vary different vegetables that I use in it. But it's always tasty.
Be creative. You'll have a lot of fun cooking on the disc.

Yup, its certainly one of my favorite tools in outdoor cooking. I mostly do my veggies on it for fajitas and such. I works very well for blackening fish. Hamburgers come out really well. My campfire disc: My paella disc: Just remember they hold heat REALLY well. Once they get hot, back off the flame, because the temp on the disc can really skyrocket if you don't watch out.

Discada Sometimes you can find it marinated and chopped ready for use in a Mexican meat market. Everything chopped into real small pieces and add amounts to taste Cheap thin steak Bacon (smoked preferred) Onion Fresh maters Fresh jalapenos Lots of spicy chorizo Lime juice (just enough to taste or to your liking) Salt Pepper Paprika Fresh crushed garlic or powdered Cilantro at the end Cook until everything melds together well. If it starts to dry up while cooking add little bit of liquid preferably your fav beer. Cook up some green onions on the side in aluminum foil with pat of butter, soy, squeeze of lime and salt. Warm up some corn tortillas and enjoy

Here are a few photos of some that my BIL has made for me and number of my friends and family. Let me know if you would like his contact info. One of my favorite disco recipes: Marianted Beef and Chicken Fajita meat from your local Michoacana with bells and onions that are sliced and marinated in vegetable oil and Julio's dry seasoning. Then everything is cooked on the disco.

When I worked at Big Bend NP, I had some of the best goat piccadillo cooked on one of these.
Mmm....mmm. I think I'm getting one. Any idea for a provider in the Houston area?

one of the greatest meals of my life was at the old lease in llano, probably around 1999-2000, it was chicken/beef/venison fajitas with corn tortillas, all cooked in a disc. that was the first and only time i have eaten from one and it was awesome. i didnt cook it so i dont know the recipe, i do know it was a very well used disc, just thought i would post for the memories...
If I send my neighbors a text and ask them to give me feedback on my lawn and plant rye into a giant dong pattern, I'm probably going to get some less than positive feedback. Same goes here.

If you want to get REAL mexican food, it'll come out of a disc or tractor rim.
Story with recipe:
My "disc cooking orientation" came when I worked paving contracting. Every friday someone would collect $2 from everyone working the site. They would buy beef, chicken, pork, and shrimp. The chicken meats would all be cut about the same thickness for even cooking. They would get a fire started early to get a smoking hot bed of coals going (this took place under the largest tree at the job site). Then they would set a tractor rim over the fire and place the disc on the rim. Once the disc was hot, some oil would go in and get hot. First, all the meats would go in to get browned. Then on top would be bell peppers, onions, about a half dozen jalepenos (halved with seeds), and corn would all go in and get sauteed. Then 4-5 cans of crushed tomatoes, chili powder, cumin, oregano, salt, pepper, and water went in after. Then it simmered and reduced. Once the water cooked most of the way out, the shrimp went in.
For $2 you got two handmade corn tortillas (which you would use to reach in and grab a scoop of meat) and a small bill millers cup full of tea. They like to make it white-boy-burning hot.
After that, I was hooked. I have had several discs. Most I cook on for a while, then sell when someone needs one (typically after I've cooked on it with them). They can be used for several different things. I do recommend some accessories for using them over fire:
2- T-posts to rest across your fire pit, so you can slide the disc over the fire, then retrieve it away when you need to flip/serve 1- pair of cheap BBQ/Welding gloves 1- really really long set of cheap tongs

yep, they guy that cooked for me received his disc for xmas from some guys he worked with. it was a disc sat down inside of a 50 gallon barrel that was cut in half.

There is a place in N FTW just passes Heritage Trace pkwy. Sits on west side of 35 w that makes discs etc.

Me n my buddy use it at the lease all the time for cooking. Don't forget to keep out of rain and keep cooking surface oiled using veg oil. Use same care as cast iron as it will rust and that's not good for cooking your favorite camp dish.
