What taste better in you opinion? Sika doe or Axis doe? and if somebody tried Sika, feedback is appreciated.

Sika, but it's close. I've never done a side by side taste test. Both, including black buck, are superior to whitetail and fallow. I'm not sure it doesn't have more to do with what they eat than anything. capt david

After I ate sika, and liked it, I decided to shoot a red hind. IMHO, it is the best of the exotic deer. I just shot my first elk. To me it is better, again close, to reds and sika, but it's the first and only elk ive eaten. capt david

This is really a subjective question. Everyone has their own taste preference. I personally like axis much better - but probably because axis is much closer to beef - a very fine lean quality of beef.
Sika, being an elk species, is much closer to elk than beef. Some folks really like elk, and prefer that taste over beef. Those folks would certainly choose Sika over Axis.
Elk (Sika) is some excellent meat, and even though I prefer Axis over Sika - both Elk and Sika (and red deer) are far superior to whitetail for the only reason that whitetail have more of a "gamey" flavor.
But even that is not fair, because I like WT too - and my experience is there a HUGE difference in whitetail across the state based upon what they are eating.
Again, personally I find the west texas whitetail and mulies who have been eating a lot of sage have a different flavor that is not my preference - but those who like sage flavor often prefer to eat those animals.
In the end, it all comes down to individual preference and taste - it's all good.
But one thing should be noted. Axis is by FAR the leanest meat, with the lowest fat and cholesterol content. Literally considered fat-free and has lower cholesterol than skinless chicken!
So Axis wins hands down and going away the most HEALTHY of all the venison! Not even close.

I voted for axis, but that's not knocking Sika. I wouldn't hesitate to put either in my freezer.

better question, when you take an axis to the processor, what do you have done to it? do you just treat it like a whitetail and do sausage, steaks, etc? or is there a better way

better question, when you take an axis to the processor, what do you have done to it? do you just treat it like a whitetail and do sausage, steaks, etc? or is there a better way With axis, I steak all I can (including the hams), stew meat, and put the rest is sausage. I don't use a ton of ground meat regardless, but on axis it's almost too lean for ground - you end up having to add a lot of pork or beef which effects the flavor. The stew meat I'll use for stir-fry or taco type dishes. If I shoot a pig, i'll skip the stew meat and do more sausage mixed with the feral pig.

When we drop off our axis we do steaks and hamburger. Got over 500 pounds of meat between axis and elk!
