MathMan, is that a homemade seasoning or do you use a premixed seasoning? I've been using a homemade recipe for a long time and it is great, but I've been thinking about trying something else.

The meat is 60% Boston butt and 40% deer. The seasoning is from a friend. He gives it to us but won't say the recipe. I'll post a pic of the smoker.

I have a question regarding your slim jims. What casing did you use? The ones I made this year were my first and the casing when at room temperature is very slimey and white. You can't see when it's cold. What gives? What did I do wrong?
