The meat is 60% Boston butt and 40% deer. The seasoning is from a friend. He gives it to us but won't say the recipe. I'll post a pic of the smoker. looks great guys!

I don't see a thermometer. Do you worry about the temp? How long does it take to cure? I would like to do this some day.
It's the time spent in God's creation with family and friends making memories that counts.

We used a thermometer later. The salami are done. I brought the internal temp to 168. I finished them in the oven. Then I put them on ice. I had never done salami before so hopefully it will be good. Online it says to mix the seasoning and cure with the meat and wait 24 hrs till you smoke it. We just did it right away. Hope that's ok. We have made the slimjims like that before and they have been perfect. Here are some pics of today.

I have a question regarding your slim jims. What casing did you use? The ones I made this year were my first and the casing when at room temperature is very slimey and white. You can't see when it's cold. What gives? What did I do wrong? use sheep casings, keep them refrigerated and soak in water
