Lupita's, about 3300 S Western in Amarillo. Very good. If you like spicy, try the chile verde.

Benito's Kitchen at the Star Mart in Hogansville, on 515 headed out to Lake Fork from Emory. It is truly the best Mexican breakfast I have ever eaten.

Ther are so many ways to go.

Huevos a la Mexicana
Huevos con chorizo
Huevos rancheros
Migas
Go to have some tortillas and salsa ( I like the green best)
Add a few refied beans and diced potatos mixed with sauteed onions, and chiles

I think my favorite mexican breakfast is chips and queso with a cold beer or two! Next favorite is beef fajita or thin steak, with fried eggs, refried beans, cheese, tortillas and some good chips and salsa
