Richters in Hondo and Dzuik in Castorville and Buc-ees all have great jerky. I used to order from a place in Wichita Falls I think was called Texas Best Beef jerky that was really great tasting jerky. Richters was great because you could get it at gas stations all over South Tx, not in a package but a chunk on a string. If you are going to a meat market then Hudsons Meat Mkt on South Congress in Austin sells it by by the 1/2 pound and it is awesome, they do venison the same way. But hands down Dziuk's in Castroville sells the best Beef jerky I have tried anywhere in TX. Their Turkey Jerky is almost as good. You can buy it online as well. http://www.dziuks.com/PRODUCTS.htm I live in DFW but I take a deer or two down to Dziuks every year. Just had them ship me an Axis they processed for me last month. Everything they do is fricken awesome.

No Mans comes out of Boise City OK...you might try Clint & Sons as well. It comes out of White Deer TX. Both are good but I lean toward Clint's. I have the receipe for no mans....have no idea how they got it from my family but they did.

Ranger Jerky made by Ranger Meat Company.
You can find it in stores around the area but I used to buy it by the box at the plant in Ranger and store in the freezer. Hard to beat.

i love jack links, but the large steak ones. I bought some from the fair and it was great, but it was expensive as hell. I think i got buffalo and alligator.

Fatman's beef jerky out of Roswell, NM is my favorite. You can pick it up at a lot of convenience stores in West Texas and Eastern NM.
The place in Post is called Jackson Brothers. They do have good jerky. My uncle gives me some every Christmas.
