Used Ye Old Butcher Shop in Plano for the 1st time. They did a fantastic job. Their rates are extremely reasonable. Good to know. Took the spike I got closing weekend there. First time to use them. Pick my meat up tomorrow.

Thumbs down on Eddie Ray's.
Previously used Eddie Rays in Elm Mott/McGregor till they HOSED me. Had used them for years with the previous owner with no problems. New owner (Eric) not so good. Shot a nice buck and dropped it off at the McGregor location for standard processing. Deer field dressed 154 Lbs on digital scales - no guessing at the weight. Was shot thru the lungs with no shock to the shoulders, backstrap or any other edible parts. Only a few broken ribs. Went to pick up the deer when it was ready and only received 27 lbs of processed meat - weighted it on the scales there when I picked it up. I have hunted deer long enough know this was not right. Should have had anywhere from the mid 60's to low 80's in the pounds of meat (Verified this with 3 reputable processors in other towns).Called them on this and Eric's remark was the that was all the meat. I had several discussions with him on this. Found out a few months later they had fired an employee at their McGregor location for stealing meat - he was giving it out to his friends. This information came directly from one of Eric's top employees. Did I ever get a call from Eric to at least apologize or make it right, heck no. Very poor business action on his part. Will never do business with them again.
On a good note, Green's sausage house in Zabcikville (Temple area) now gets my business. They have been great and priced reasonable. Have also used Fulton's (Waco area) with good results.

I have been using Syracuse in Keller for the last 2 years, sausage is great and the bacon wrapped seasoned fillets are out of this world.

Do not use rockwall deer processor!!!! They threw away a trophy boar head with 4 1/2 inch cutters when it was requested they save it. Many times during our conversation they where told that and I went to get it today to take it to the taxidermy and they said they tossed it. This was a 400 pound hog with massive cutters that I paid good money to hunt and they just threw it in the thrash. I beleave they keep the thing for one one there employees or something.they even said it was nice. I have requested owner to contact me no calls back and they never answer there phones. Very unprofessional company. I am very unhappy at this moment. I will never use them again!!!!

Thumbs up for ye ol butcher shop in Plano. Switched processors this yr and they did a great job and it was about half the price.

Tevebaugh's in Longview area they do a great job with basic fee starting at 65.00 and with a few extras might top out at 150.00 but I am best processor...like doing it myself, have acquired all the needed tools over the years, best part I work cheap, season sausages to my taste, and personally know the guy in charge of the complaints dept.lol my grandad was a butcher by trade so i guess i have it in the genes and have been asked to start my own processing business but would become work then and take all the fun out of it..besides when are processors the busiest times...no thanks

took a deer i shot in Kansas to the Hopkins Locker in Sulpher Springs. I only got 17 pounds of ground and 3 small packs backstrap back. The deer field dressed about 100#s!

I think I've tried everyone in Tarrant and surrounding counties (north, south, and west.. I don't go east) and nothing is better than Syracuse. Best I've ever had by a long shot.

Hall's processing in Coleman is great! Seems like it may have been a little pricey though.
Old Plantation Meats in Springtown does a decent job and the prices were fair.

ME!!! Would never trust my game animals to anyone else. It's more rewarding to do it yourself. Knowing how the meat was handled and just knowing, I got my meat back, is the #1 reason to do it yourself. There's several things that have to be done during processing any animal if skipped will taint your meat. That is why most people say, "I hate the wild taste of game animals". Your game meat should never have a wild taste. I've processed over 100 deer myself and have never had anyone say anything negative about the taste of my game meat. Most people say it's hard to tell it from beef. Processors might cut corners because they have so much to do and you don't get a good product. Do it yourself. Expensive up front cost to get the equipment but will pay for itself after you process 5-6 deer. Happy to give tips I've learned through the years.

At fisher I took some pigs there and all the breakfast sausage had bone ground in it on multiple occasions so now I use hunters choice in sanger TX and love there jalapeno cheese summer sausage and breakfast sausage is great also
