Hints on Coopers in Llano.....

1. They only cook so much per day, when it's gone, it's gone. The earlier in the day you get there, the better the quality. Anyone who eats there after 3:00 p.m. deserves what they get. Any meat that's left by then has been on the coals for many, many hours.

2. IMHO, their best offerings are the pork tenderloin, chicken (half a chicken for $5 is hard to beat!), and cabrito. Wouldn't pay for anything else. Again, see #1.

3. You'll rarely see a local eat there on the weekend. On the weekdays, it's a different story, and.....the locals are well aware of #1.

4. Look before you buy!! If you want brisket, look at it before you have him hack off a hunk to see if it's the fatty part or the lean part. Look at the tenderloin to see if it looks moist. Same goes with the sausage, ribs, etc.

5. Best advice I could give is to get there during the week. Second best piece of advice is to get there before noon, no matter when you go. You'll get the best quality stuff they have to offer.

6. Appropriately last, try the cobblers for dessert. Yummy.

Gonna have to dissagree with ya on number 1..I am in the food service business..If it is over cooked or below par then dont sell it..Customers deserve what they ordered..nothing less...I agre their Cabrito is excellent...

Feel free to disagree, but I'd ask you to go to Coopers at 6:00 p.m. and see for yourself......

I understand what you are saying .BUT that is a shame if they do that... ..I was also talking about the "they deserve what they get".If Im paying for a piece of meat then it better be quality..If you stay open till 6 then serve quality till 6...They are too many ways to hold food at proper temps and serve quality..OR DONT SERVE it.or dont stay open.....when passing thru there I have eaten there twice...both times got the Cabrito...early in the day...and ir was great...

The only reason I say they deserve what they get is that you actually look at what you're ordering before you order it. If you look at a shriveled piece of sausage and order it anyway.....

That said, I don't think we disagree all that much on the subject.

Im surprised noone has mentioned Underwoods in Brownwood, my dad picks up some everytime he goes through there, the sliced brisket is really good. I think it is still there, it has been a while. Also, RJ's in my town, San Angelo is pretty good. Also Pack Saddle out by Lake Nasworthy is good too, they also serve good catfish. I had Pack Saddle, twice, smoke a leg and ribs off a hog I shot and it was really good, moist and tender, didnt cost much either. Also when you go to Pack Saddle you can look toward the lake by the electric plant and see some good bucks eating on the grass behind the high fence, saw one with a four inch drop tine three days ago, only forty yards from our truck. I'm surprised no one's mentioned these, but Railhead Smokehouse and Angelo's BBQ....both in Fort Worth and both great stuff.

Couple of out of the way places are Hammond's in Glen Rose as mentioned by a few others, and Natty Flat Smokehouse on 281 about five miles south of I-20 right next door to that rustic furniture place with the HUGE rocking chair out front.

Good God Almighty that is good sliced brisket....The sausage is OK, but the brisket rocks!!!

Ate one the other day, took 41 west to 336 south to Leakey, got some groceries and back up 83 to my buddy's ranch...

Gonna be some more good times there to come!

Anyone go to Joe Allen's in Abilene? Cooper's is probably the best I have had, though.

Hillbilly maybe I was there on a bad day but I thought Angelos was pretty bad. I wasn't impressed by anything and we tried almost everything.
