A new processor just opened up in Rockwall at the corner of FM549 @ Hwy 66. I have not used them though.


I had them process my buck shoulders and hindquarters into jalapeno cheddar summer sausage and spicy breakfast sausage. Their summer sausage is amazing, we took a round (link?) of it to Thanksgiving dinner and everyone loved it. We didn't have any left!

My husband and I are both pleased with the spicy breakfast sausage. We're both pepper heads and the spicy breakfast sausage is just pleasantly spicy for us. I couldn't taste any heat in the jalapeno cheddar summer sausage but I could taste (and see when sliced) jalapeno.

CodyPatt: I have their form right here, so sorry if this is TMI.

From their processing form directly it says that general processing is $70 which includes steaks, roasts, back straps, tenderloins & 10lbs of burger or chili ground meat.

Also they list additional charges for skinning, caping, tenderizing, vacuum packing, & dirty meat.

The jalapeno cheese summer sausage is 4.50lb and the breakfast sausage is 3.50lb. They do link sausages too, and their prices are between 3.50lb-4.50lb on all their sausages (and meatballs).

The most expensive item they do is strip jerky at $14.00lb. They also have "hunter sticks" at $8.00/lb. Tamales are $9.00/dozen.

if you're anywhere close to Abilene. Archa's is the place to get your deer processed. All your meat is accounted for and the staff is super friendly.

Used to drive to Dallas to get Kuby's
until I found Syracuse in Keller.
Awesome sausage.
They actually vacuum pack their meat, where Kuby's just throws it in a sack.
If you bring your deer in quartered its a fair price, down right cheap if you bring it in boned out.

Also Nicholson's in Mertzon, best ground venison at a great price. All they add is 10% beef fat, and it tastes incredible, I don't buy ground beef anymore.
