Arlene's from Willafa Woods was da Bomb! Alas she and hubby have retired and no Arlene's anymore.
I remember when she ran off to Vegas with all the money. When they were still in Willafa Woods Okla she decided to commit suicide. She walked down to the water and waded in. Didn't work out for her.
They soon after moved to a new location. Her husband was a heck of a nice guy despite her quirks.
Wendy's was a previous employee of Arlene's, opened his own business. Ate there once, liked Arlene's better.
HUCK's is the place on this side of Grayson County, On US Hwy 377 across Lake Texoma is a catfish place, ?? name, heard there was always a wait on Fri/Sat nights like Arlene's used to be.

Place in Mesquite out of Garland, S. Broadway, ate there a couple of times, was very good. Long tables, just join in with everybody IIRC.

Vernon's is definitely good! Eat there at least twice a month...but Catfish Junction in Broaddus beats them all

Crave the Taste in Garland has some really good fried catfish. It isn't all you can eat though.

Metzler's in Denton (off of Teasly) has pretty tasty all you can eat fried catfish. All you can eat only on Fridays and Saturdays though. It is technicially all you can eat pork ribs and fried catfish, but I always got just all catfish. They charge you less for it than ribs & fish too.

I keep meaning to try the Catfish Cove in Sunnyvale/Garland/Mesquite (it is right where they intersect and I have no idea which city it is technically in). Haven't got around to it yet.

theres a place in ANNA TX, called "CROWS NEST" that isnt to bad , they give you some big pieces too.

but hucks in denison is still my number 1.

FYI.
I know this is best, just want to share a Not so good place. Catfish O Harley's on 287 just north of Decatur. Ate there twice, won't happen again. Small, dry fish stick like, little flavor.

Godken's in Zapata overlooking Falcon Lake used to be awesome, not sure if still around. The catfish buffet at Catfish Charlies in Corpus Christi is hard to beat!

Dougs peach orchard in Terral OK. Little hole in the wall place, but hands down the best fish, shrimp and calf fries, and the best tarter sauce!
