J & J Deer Processing Graford, Texas I have to STRONGLY disagree. Hair in the meat, very little meat returned, over-priced, dirty environment. Took a pig there, about 100lbs, got back maybe 20 lbs. & had to pay $185!!! I was PO'd to say the least. We've taken probably 7 different animals there & none of us will EVER go back. Same here..Except my bill was alittle over 300..Hopefully I can find a place around Jacksboro this year.

I haven't read all 31 pages to see if anyone named My favorite, but I use J & S outside of Fairfield off Hwy 75 just a mile down 833. They will treat you right! In Freestone county, and close to Leon, Limestone and Anderson Counties....slow smoked hindquarter hams are the bomb!!!Jerky awesome..

can anyone tell me a good place between sulphur springs and rockwall? A new processor just opened up in Rockwall at the corner of FM549 @ Hwy 66. I have not used them though.

Ed's Butcher Block in Bryan, Tx makes some good sausage. Pretty unique flavor, never found any like it anywhere else.

Im a new hunter with a low income I would rather clean and process my own deer but I have no clue what to do. If I could get some tips on how to do this I would appreciate it. Thanks

Have already eaten the first pound of Jalepeno Cheese Summer Sausage while hunting this weekend and I highly recommend it. Can't wait to try the spicy breakfeast sausage in the morning.

We've used Clear Fork Country in Graham for the last 5 years and been pretty happy with them. One year they even brought the meat in a refrigerated trailer to the Cabela's in Fort Worth so DFW hunters didn't have to make the drive out after the season. We took my sons buck there Saturday. On a whim I took the one I shot yesterday to J&J Processing in Jacksboro. I had seen the place there since last year and thought I'd give it a try. They do have some processing options that clear fork doesn't - german links, hot links, and jerky sticks. I perused the entire thread here and saw only two posts - one good and one bad about J&J but it was for their Graford operation (J&J operates out of Graford, Newcastle, and Jacksboro) - but I would assume (know what that does but oh well) that with 3 locations they can't be too bad. Price wise they seem to be about the same - maybe a little cheaper than Clear Fork. (Certainly so if all you are doing is basic processing with vacuum packaging - I believe the price for that with J&J is $80 where with Clear Fork it is $105 or there abouts). Earl

Joshua Meats off of 174, they stayed around late tonight so I could bring my deer in. Drove all the way from Weatherford place is VERY clean and good people!!

Oh Deer! processing in Stamford Texas off of 277. Couldn't be more pleased with the service and job they have done on the two deer i have sent them thus far. They offer rush service for next morning pickup and shipping for out of town hunters.

I had them process my buck shoulders and hindquarters into jalapeno cheddar summer sausage and spicy breakfast sausage. Their summer sausage is amazing, we took a round (link?) of it to Thanksgiving dinner and everyone loved it. We didn't have any left! My husband and I are both pleased with the spicy breakfast sausage. We're both pepper heads and the spicy breakfast sausage is just pleasantly spicy for us. I couldn't taste any heat in the jalapeno cheddar summer sausage but I could taste (and see when sliced) jalapeno. Hope that helps!
If it looks good, eat it.
