If you are new to town try Pruski's market for their meat. I have never used them for game processing but they do it. There steaks and sausage are top notch. I always used Broadway Locker downtown but they closed this year. I have not used the other two.

Hopkins County Meat Locker. I've been taking KS deer in there for years and they still freak out.

schotts is also very good.
For it is not the quarry that we truly seek, but the adventure.

schotts is also very good. No offense, but DO NOT USE PRESA. I threw out the pan sausage they made for me. It was rank and nobody would eat it. I only took in parts of 5 hogs for sausage, and the parts I kept and cooked at home were great. The stuff I took in was from the same hogs, and somehow it tasted like rancid roadkill and gave off a nasty odor when cooked. They obviously mix a bunch together in batches and divy it up by weight. I just know I did not get what I took in. I will never take game there again. I have had good luck with Granzines.

Granzin's meat market in New Braunfels & Pleasanton great processing & no batching. You get exactly what you bring in. Hard to find those processors these days

I have always used Kuby's and been very happy with the results.
Last year, I tried Syracuse at the recommendation of some Ft. Worth guys on the lease. Horrible!!! The pork chops were cut thicker than a Ribeye should be (saves them processing time) and the ground venison was so full of gristle, I have to pick each package apart for a half hour before even having it dog ready. If I want to eat it, I have to pick some more.
Back to Kubys from now on. I did hear the processor in Joshua is good. I tasted some summer sausage from them & it was great. They are just not conveniently located for me (N/W Dallas).

Eddies on 1604 & Nacodoches on the NE side for SA does pretty good but they do their sausage in batches so you can't mix your own. They do decent ring sausage and jerky. I used them for about 10 years then switched to Dziuk's Meat Market in Castroville since I now live over by Seaworld.
Dzuik's will mix to your specific requirements and WILL ship if you need it done that way. Jerky there is really good along with dried & smoked sausage.

I have been a meat cutter for 18 years and for the last three years I have worked part time at a deer processing plant called Syracuses custom meats in north fort worth and I must say they have the best meat anywhere!!!!! And they do it all Elk, antelope, ala gator, deer and they can make a 400 pound nasty hog taste like Heaven!!!!!

interesting that you say this, I have been running a family owned steakhouse in Avinger, bout 1 hr from Texarkana for the better part of 13 yrs. We cut all of the steaks fresh on the premises...I have recently looked into opening a business to process wild game. I have had huge interest coming from the Texarkana area because they say they have no where decent to take their wild game. Fischer's Meat Market
Muenster, TX. It's worth the drive.
THE Best - hand's down! <img src="/ubbthreads/images/graemlins/woot.gif" alt="" />
Another vote for Fischer's http://www.fischersmeatmarket.com/Then go to The Center restaurant for lunch/dinner. Great food, especially the chocolate or coconut pie.
