Ok, I get it now, you changed the post to "JackRabbits hunting in North Texas area", your question now makes sense. Make a post in the "Hogs, Varmint & Small Game Hunting" section, you get some better help.

I've never done any of those foofoo high-fence hunts so I wouldn't know the taste of exotics to be any any better than a dog turd...I haven't had either. But I'll take a 100 lb. pig over a whitetail any day. And obviously quail...but that's a given.

I have never hunted on a high fence either. Lots of wild axis in the hill country.

BBQ bullfrog legs is hard to beat. Kangaroo comes in last of all. One cube can feed 1000 men. It keeps on swelling the more its chewed..

+1 for wild hog. Had tenderloins Friday night and smoked a shoulder on Sunday. Hard to beat those tender pulled pork sandwiches! Dove is really hard to beat to. Bacon wrapped with cream cheese in the middle.

Quail-----> pan fried, deep fried, grilled, quail and dumpings, getting hungry may pull a dozen blues out of the freezer for tonight.
