I quit trying to like it a long time ago. Its really not just good till you cover it a marinade it. If you have to do that much to make it right it aint worth it. You can buy a whole lot better tasting meat cheaper X2 - You can soak/beat/marinade, etc all you want but it will not taste better than beef, IMO Was that pre AR or after AR's on your dislike of venison?
Are idiots multiplying faster than normal people?

It took me a while to get used to it, too. But now I love it.
I eat the ground meat at least once or twice a week. I like the back strap fried or as bacon wraps.

Chicken fried is one of my favorite ways to eat it. But I also like it like this. Take a whole backstrap and roll/slice it out like a pork tenderloin to make it flat, then pound it to about a 1/4 inch thickness all the way around. Fill with onions, jalapenos, and pepper jack cheese. Roll back up and wrap in bacon, use toothpicks to secure the bacon. Grill or smoke until you hit an internal temp of about 150-155. DELICIOUS. Roughly something like this.... That look's like it would be awesome!! I'm gonna thaw some out and try that this weekend!

I switched to exotics several years ago and love it much more than whitetail. We started with Axis, they went to Red Deer, Elk and Bison. I like them all over beef because I know I'm not going to see red dye, antibiotics and other nasties added to the meat.
This year I just had all my whitetail ground into sausage (pan and Jal/Cheese smoked ring). When I do indulge in a whitetail steak, it'll be chicken-fried for sure.

ignore all the above posts, go shoot deer, I'll send you my digits and take those nasty whitetail off your hands. Its a sacrifice, but I'm willing to to help a fellow member Tree Bass got right. You just shoot all you want and send me an email, I'll take it off your hands (or split it with Tree Bass for coming up with such a good idea). All things aside...Here's something I haven't seen in this thread yet! We take the whole hindquarter, marinate it. Salt & pepper or rub to your preference. Wrap in heavy foil to keep juice in, leave top open and put it in the smoker for about 30min on each side (your choice on wood - Oak & Mesquite is good) and then put it in the oven. Pour in a 16oz Bud for good measure, close the top, and slow cook (You can put it back on the smoker if you want). When your through slice like a brisket and put in 1 lb vacuum sealed bags. If you want roast - heat & serve. If you want BBQ add sauce - heat & serve. If you want a sandwich - heat & put between 2 pieces of bread. Take a pound, slice in 1 in squares and put in soup or stew - yep, heat & serve. (We finally started de-boning the hindquarters - sometimes process at home sometimes use processor)

I take my deer to Kuby's Keep the tenders and backstraps whole grind the rest into hamburger and chili No game smell or taste

Never! I slice the straps about 3/4". Before I cook them, soak them in milk/egg for about 20 minutes, throw em in seasoned flour and fry them up. Most everything else goes to ground meat and is used in everything.
Ducks..... same thing, soak them in milk, except the trash ducks- they go to friends!
I'd ask him if he's pregnant. He missed a s__tload of periods. I'll take "things that look like a uterus" for $200 Alex.

I didnt bother to read the 6 pages but i bet most of them blamed the person who did the cleaning. Deer doestn taste good. Especially if you have access to axis or elk.

Venison is 98% of the red meat my family eats. Don't know if you are doing a brine soak or not but that immensely helps the flavor. Shouldn't go to waste though. There are plenty of folks in need out there. Donate.

We were over at his house for a little get together and he said I've got something cooking I want you to try, don't know if it will be worth a darn or not. He started slicing it and we were burning ourselves trying to get another piece down before other people caught on. It's outstanding.

txtrophy85: it sounds like you're maybe psyching yourself out thinking about eating game? I only say that because my wife and kids are some of the pickyest eaters around and they LOVE venison. One of their favorites is backstrap, tenderized with a mallet or other mechanical meat tenderizer tossed in flower, then egg wash and flower again, fried like chicken fried steak. I have all of mine ground. I use it in enchiladas, chili, tacos, and meat balls for spaghetti.
I also don't care for the taste unless covered up with seasonings.
Without a sense of urgency, nothing ever happens.

Venison is number 1 meat at my place and love the chicken fry! My mom had a good recipe for duck, slow bake the duck with rice and then when done eat the rice and throw away the duck.

First of all, if you want to eat the best red meat on the planet, find a friend and go in together on a cow. My buddy and I purchase a cow from the local FFA chapter at our high school. There is nothing better than a cow raised without steriods or hormones. You will find out why cows have become the most popular red meat to consume by mankind.
That being said, I do like venison backstraps. A real easy way to prepare is to simply mix a marninade of 1/2 A1 and 1/2 Worchestire and soak your backstrap steaks in it at least one hour prior to grilling. Get the grill fairly hot (about 400 degrees) and "flash" grill the steaks about 1 1/2 - 2 minutes on each side. You want the backstrap to be "pink" on the inside.
I promise you that you will never want to fry a piece of backstap again.
I have gotten to the point that I can't stand any more hot links or sausage. That stuff is very unhealthy and at my age (48) I had to make a decision to eat more nutrious food. Deer sausage and links don't fit that criteria.
Backstrap, however, is a very lean and protein rich food that actually is good for you. And as long as you don't fry it but grill it instead, you can eat it as often as you want and not worry about clogging your arteries.
I also like deer jery, especially the stuff that Bayco processors make in Seymour. Darn good stuff.

I may have the answer. My family would only eat jerkey. I tried just about everything to make them like it. Finnaly I stumbled on to it. Tomales! There is actually very little meat per tomale and the bulk of what you taste is the masa. My wife and kids will put the whoop on them. Once prepared just defrost and nuke them. Quick snack or a meal, we love them. Ive gotten to where i just pay basic processing for groud meat. Freeze it and give it to my cleaning lady to have tomales made. Tell them to keep some for themselves and pay them for their trouble. They are excited and I come out cheaper that way too.

I loves me some whitetail venison! I eat the backstraps, tenderloins and grind the rest up but if I do keep some venison steaks...I chicken fry it or make jerky out of it.

Man some of ya'll are crazy. You kill the right ducks and fry the breast up like steak fingers. Then serve 'em with white gravy and some Hidden Valley Ranch, and you can't beat that.

I think it sucks too. Not even going to justify hunting by claiming "I love the meat". I think a lot of people "like" it just to be old school, but if offered a nice beef steak would eat that if no one was looking. Kind of like those that have Harleys and wear leathers just for an image. 99% of mine gets donated or given away. Exotics are another story though! You'll be hard pressed for me to give any axis or red deer.
Those of you that only serve your family wild game might want to do some research. You're actually doing harm by doing that as compared to lean domesticated beef.
