This stuff I AWESOME !! 1LB hamburger meat 1 small onion chopped 1 bell pepper chopped 1 package taco seasoning (Lowery's) 1 can Rotel original 2 8 oz cans Pinto beans (Drained) 1 8 oz can whole corn (Drained) 1 package Hidden Valley Ranch mix 1-2 cups water Brown hamburger meat with onion and bell pepper. Drain fat. Add water and dry mixes. Stir to blend. Add everything else. Simmer 20-30 minutes. Salt and pepper to taste.

It is awesome but it does have a little bite to it ! One thing I do a little different is only use half a can of the corn and use the juice to replace some of the water its called for !
Caroline had a good tortillia soup recipet Ill see if I can find it for ya !

I add pintos, black beans, garbanzo beans, red kidney beans, and corn. Top with some cilantro, chopped onion, maybe some cheese.

Oh that reminds be, I use black beans instead of pinto and sprinkle grated chees on top with a little cilantro. That goes in each bowl and not into the soup itself!

My CHICKEN TORTILLA SOUP 6 or 8 chicken thighs ( or 4 breast) chop 4 stalks celery chop 1/2 large onion put in pot w/ 2 cans of chicken broth ,salt and pepper
when chicken is done remove and let cool
add to the pot 1- large can of Cream of Chicken 1- can of chedder cheese soup debone chicken and cut into 3/4" pcs add chicken to pot 3/4 jar of (I use mild) Hell on the Red Serve with graded cheese and tortilla chips
Hope you enjoy!!! I did not find this in a book It's my own recipe.

Gonna make some cilantro rice to go with it too. TBL olive oil 2 cups rice 3 cups chicken broth low sodium juice of a lime 2 tsp garlic salt 1 cup chopped cilantro I mix all but cilantro and cook in rice maker, but it can be made just as you make regular rice according to cooking directions on package. When its finished i add the chopped cilantro and usually some additional lime juice.

Worchester sauce 4 corn tortillas, sautéed lightly Shredded Monterey Jack or cheddar cheese Saute onions, jalapenos, garlic & tomatoes in a large pan for several min. Add remaining ingredients except tortillas, chicken & cheese. Simmer for 30 min., add chicken meat and simmer another 30 min. 10 to 20 min. before serving tear tortillas into bite size pieces & add to soup. Place grated cheese in individual bowls & ladle hot soup on top. Optional: You can add sliced avocado to the bowls if you are a Yuppie.

Mine is very similar to this but instead of a can of white chicken meat I take a rotisserie chicken and strip all the meat off of it throw it in a skillet with chicken taco seasoning. 4 more cups of broth 14 oz can of diced tomatoes 2 thickly sliced zucchini 1 green bell pepper diced 1 red bell pepper diced 8 oz of mushrooms....just because I like mushrooms 1 big can of corn drained. 1 big can of ranch style beans. You have to have a big crock pot but man oh man is it good.

We sustitute a couple of jalepeno's for the bell pepper, it gives a little extra bite ours is the same recipe as yours we also crush up tortilla chips in the soup after we get a bowl, plus use a few for dipping VERY low points for weight watcher diet on this soup also HIGHLY RECOMMENDED

So go out in the back yard, grab a chicken, ring it's neck, pluck it, I said pluck it, gut it, boil it for 45 min., debone it and throw the meat into the soup pot. Save the water you boiled the chicken in for the broth. Get some fresh corn, remove the corn from the cob, boil the corn, make tortillas. Get the fresh onions and the jalapenos out of your organic garden. Churn the milk to make cheese... You get the idea, make it as hard or as simple as you want, but if you follow the recipe it really is good.

You will find the canned white meat chicken in the canned meat isle at the grocery. What we use is in a can about the same size as a large can of tuma. I guess I am getting a little thin skinned in my old age.
