What exactly are the good parts of the pig? What time of the year is good for eating?

What exactly are the good parts of the pig? What time of the year is good for eating? hams, shoulders & loins....anytime of year is good as long as you cool the meat as fast as possible(especially during the summer)

I guess I've been lucky, I've never killed a stinky pig and I eat just about every one I kill. I trapped one last summer that I had to let lay just because I had to trek almost 1\2 mi. through mid-calf mud to get to the trap. I shot it and gutted it with the intention of packing the meat back to the house but the flies were so thick on it and it was over 100 deg. that I just drug it away from the trap and left it. The following weekend there was nothing left except a few vertebrae and hair. I couldn't even find the skull. I just can't stand to waste good meat and I love me some ribs...

Ditches are a great place to put them! I've got some in my area that feel that way, unfortunately. Why they haul them out to my area just to toss them is beyond me - if they don't want them then why not let them lie where they were shot? No better than tossing tires or garbage in my book. It's there kill, so I shouldn't have to clean up their mess.

Okay so I have been thinking about guiding hog hunts and I feel that once a hog has been taken that its meat should be kept even if they dont want it but a guy can only keep or give away so much meat. I don't really feel like the kill and let lay method is very ethical even tho hogs are so over populated if yall would just give me your opinions on the kill and let lay method and where if anywhere you might be able to take a hog that's dead and donate the meat. Some Hunters for the Hungry spots take them I'm told, but not all. Every pig that is trapped or shot by me is used, no exceptions. After my freezer is filled, some goes to the in-laws, then I start handing them out to co-workers. So far this season we've shot 3 and trapped 5 between 90 and 168 pounds, and were given another that was 155. I could easily give away another 5 adult hogs if I get them. There's always a waiting list. Even if it was a stinky 500 lb boar, we'd process it. I don't see pigs as being any different than deer, duck, or rabbit. If you kill it, it should be used. If at some point I run out of people that want pigs and my freezer is full, I'll stop trapping. I was poor growing up, and see to many that need help now. Letting the meat waste is just something I cannot do. But, the pigs aren't causing me trouble, so I have no economic motivation to get rid of them. I feel a strong environmental reason to get rid of them, but I also feel that way about axis, blackbuck, and all those other introduced exotics in Texas. To me, they are no different (and just as tasty).
