Amen! Shirts, vests, etc for left handed shooters is a market that might be good for a beginning company. Not "ambidextrous" as that kind of gear rarely fits either properly.

Make the zippers extra large so us old arthritic people can grasp the pull. Personally i like velcro to close flap over jacket zipper and pocket flaps. Fleece is good for layering.

Jacket with slick insides, not material that catches on the shirt under it.
I like it to look good and neutral

See lots of people thinking about stuff for the cool part of deer seaon. THIS IS TEXAS, NOT ALASKA! We don't get cold down here till after Thanksgiving usually. We hunt year around down here!  For us bow hunters hunting in ground blinds that usually means we are hunting in 80 degree plus and warm clothing is not on our minds. It's great to see camo's and stuff we need to wear during December thru February. But it's not always available in clothing made for hot weather hunting. More availability in a variety of warm weather camo patterns would certainly help.

I like shirts that don't pull the tails out when you raise your arms up. I also like pants that aren't like a cheap hotel.

My advice the hunting appearl market is a tuff market to compete in!!! Escpecially if you don't have the technology behind it
One of the best small introduction companies that are making it is gamegaurd.. But I suspect a lot of their stuff my be on consignment.
Personally If i was to start my own outdoor appareal line i would go after the women segment..They have limited choices and have no issues paying a premium to finish out the look

I look for something that fits tall skinny people. Most hunting clothes are made for short fat people. Not all hutners are puss gutted dwarfs! just most of them.
After that, i like clothing that layers well, not some big thick insulated outer layer that makes me sweat while walking.
Fleece and microfleece has become my "go to" in hunting and outdoor clothing. I like it for it's quick drying ability, and it's breathe-ability. I find it keeps me comfortable over a wider range of temps.

I guess I need to say it again.......shirts with long enough tails to stay tucked in and layer well.
This is not a small thing and has caused me to stop by camo from two companies.

I've never been interested in hunting a tire. If it's still on my truck, I won't have a way home from the lease. If it's just lying in a dump somewhere, it's no challenge to hunt, anyway. Besides, no matter how long you cook them, they never get tender enough for my tastes, and they just always seem to taste like, well, the bubble gum you get out of those machines in gas station bathrooms, and it doesn't matter how long you marinade them or what you use to marinade them in.
Now old TV's are a whole different matter. Fun to watch them implode when you shoot 'em.
