Most processors will give you your steaks back and then for your sausage and ground meat they will do a batch grind. It doesn't really make fiscal sense for a processor to stop production to clean their grinders and mix with pork after every deer.

In Hamilton we use Wenzell's Meat Company. They only take quartered up deer and you get your deer back. Great people too. The best Jagerwaurst on the planet.

txhunter24, we've been using Hall's since they opened up. Steve and his family are great people. Never had any issues or doubt that I was getting my deer back. Stop in and talk to Steve you won't meet a nicer guy from the Coleman area. He has relatives that do the taxidermy work over in Bronte, Hall of Fame Taxidermy and do great work as well. Halls does great work. I also had an 8pt mount done by Hall of Fame Taxidermy in Bronte that also turned out great. You guys should try out B and B feed. They do great work. Plus you dont have to wait in line! B&B's son Eric also does Taxidermy work. His shop is in the Gainsville. He does GREAT work too.

Its called trust! Did that years ago, but have a meat grinder from hell now so we do our own hamburger and such. If your worried about your own meat or whatever, do bizz with a local small time meat market and get to know them. Small time operations usually yield better results. I deal with a small time market in Brenham TX, and never had a problem with them. I know who im dealing with, beside do bizz with them, give them the bizz instead of some big box grocery store chain, not knocking the big locals in TX, but you know who!
Besides after doing it all these years its really not that all hard work, yes its some time but outcome is rewarding to say the least!
Just had nice spaghetti diner last night with homemade meat balls from a doe, garlic, onions, homemade sauce, best of all, no preservatives in the meat!
get your knifes out and start sharpening them!
happy trails! bue

I've been doing my own including sausage/jerky etc.. For the last 4 years. Built up my assortment of equipment over the last few years. Gets easier every time. Wouldn't take one to a processor now.
