I'm from the DFW area as well, but we just moved here, so not to sure whats available or who's good to use. there is a new directory out though, called HuntFishGuide.com that is listing meat processor's, taxidermists, bait/tackle shops, etc. with reviews available, under the different outfitters or guides profiles. You could always just check on their map for whats available close to where you hunt. They're a new site though so I don't think there are many of those listed yet, I'm just saying you can check back from time to time

So many of these places just know how to make sausage (some not so good at that), hamburger and tenderized round steak. I would like to find a place in the Spring, Texas area that can butcher larger animals and not just cut meat into pieces.

One of my guys had his last deer done at Hudson's in Austin. Just the regular ol' mild sausage is the best venison sausage I've ever had! The bacon wrapped burgers were great too!

I dont know if anyone knows these guys put my processor is Waltershieds or also known as Muenster Meat Company. I have taken my animals to them for 10 years and i have never had a complaint.

Saunders Processing in New Baden makes some of the best 50/50 venison sausage I have ever tasted, and I am finicky about my deer sausage. I might get the whole deer in sausage next year!

Red Oak Taxidermy and Processing makes the BEST sausage I have ever had. I try to use them when I can. N bound service rd on 35E in Red Oak...He does a heck of a taxidermy job too.
