Big Buck Processing in Clifton, TX. They have great summer sausage and breakfast sausage and make a bacon&cheddar hamburger patty. Very clean facility.

Cernoch's in Rosenberg (281.341.9571). Liked Midaway's in Katy but this place really impressed me. The place is very clean and lot's to choose from for your processing needs... Their casing is outstanding on the link sausage and the pan sausage is top notch. The product comes cleaned and well wrapped for storage. Right near hwy59 not far from hwy36.

In Kerrville, Rhodes Brothers Taxidermy and Game Processing. They are reasonably priced and I feel I always get back all of "my" animal.

do not use the guys in Robert Lee. They take the deer and money up front and when you go to pick it up no deer, and they tell you that you have picked it up already.

Cernoch's outside of Rosenburg. It's before spur 10 on 59 heading South.
Why don't I do it myself? Time. Tres did some of the best sausage I've ever had...
