Readfields in Bryan/College St. Not the cheapest but makes great sausage. Try the jalepeno and cheese.

I've used J & S in Fairfield when I hunted Richland WMA. They are awesome and were recommended by the local folk. Good prices, good product, and friendly folks. I've also used the Detroit Locker plant when I hunt up in Red River county. They also have the same good quality, prices, and friendliness. But be advised twice now I've checked in deer in the back and the game warden was there with clipboard in hand checking tags and licenses. Now I've used Syracuse in Keller twice now and both times I've walked away with hard feelings. They can make a quality product, but their prices are high and customer service skills were lacking. I realize deer season can be busy for them, but at least act like you want my business as a repeat customer. I see other posts in this thread had the same experience. Maybe they'll get the message.

Syracuse Custom Meats. The butterflied, marinated backstraps are awesome. If you're out here in the Abilene area, you can take your deer to Sportsman's One Stop in Anson. They deliver the deer to Syracuse and bring back the final product.

Totally Traditional Taxidermy and Processing in Tomball. They make the best summer sausage I can remember ever having. They are always there and I you will always get your animal back, usually in a few weeks at most. Their taxidermy work is by far the best with all the small details paid close attention to. I use HHH in Archer City. Does it quick enough for me and wont cost an arm and a leg.
(edit) Just scrolled through the 12 pages of this and was wondering if anyone computer savy, could orginize a list by county? I know up here around Wichita Falls, the county's are not that big distance wise. I've been here 3 years and only know of 3 processors, and 2 are on the way to the lease.
I think it might be helpfull.

These are the only ones I have used that is close to Vernon. Fair folks to deal with. Never had any sausage made, but pretty quick turn around.

Does anyone have any good processors east of dallas around I-30 say between sulphur spring and mt pleasant? Say the Wood,Rains,Hopkins, Bowie, south Red River, Titus, Franklin, Camp county area?

Try Po'Boys Outback. I dropped off a few deer there this weekened, and he gave me some samples. Everything was great, and he will spice it to your taste.

Just had some summer sausage and smoked sausage made at Gorman's in Terrell. First time I've been there - didn't even know it was there a month ago. The summer sausage and half the smoked is jalapeno/cheese, the rest regular. Some of the best I've had anywhere. I will definitely go back!

Sklenariks in Miles is awesome and The Flagg Group in Dallas (which Syracuse' does their processing). Pretty good stuff. Also can't beat the price at Deep Creek processing Moran.
