Midway Meat Processing - Katy, Tx Open 24/7 during deer season. Great sausage. Will process hogs also.
If hunting was easy, they'd call it killing.

Anyone ever use David's Meat Market in garland. I had a deer processed there last year and he did a wonderful job. His jalapeno summer sausage was unbelievable. I heard that his sausage is even better. He is located between Beltline and Arapaho on Jupiter Rd. Sample Ranch Processing on Hwy 22 between Meridian and Hamilton. Open 7 days a week during season. Makes great J/C Summer Sausage and prices are not bad.

Here's three I can personally vouch for:
If in the Brady, TX area: Steve's Meat Market This guy is an A & M grad who was born and raised in this small town. Honest, friendly, and an open container is never frowned upon. Probably the best of the trio..
If traveling back from Stephenville area down 377, stop in at Kenny Fred Stafford's place on the curve there in Bluff Dale, TX. Here, an open container is required and a desire to bullshit is always welcome. Prices are average but the quality is a little suspect. This place ranks highest on amibiance, but lowest overall. Even if you're not leaving your deer here, stop in anyway. You'll love the experience, nonetheless.
Finally, in Plano, TX: Ye Ole Butcher Shoppe. The owner has a full blown diner attached to his butcher shop offering burgers to barbecue. Prices are very reasonable and the quality is very good. Best of all is the proximity to the North Dallas hunter.

I hunt North of Jacksboro off of 281 and live in Saginaw. Has anyone used either the processor there in Jacksboro or any of them up and down 199 before 820? Someone said Plantation in Springtown, how are they?

I hunt West of Jacksboro in Young County. As far as I know, there IS NO processor in Jacksboro. The one that used to be there Jack County Processing or whatever accross from Fort Richardson (or whatever the Fort is) is no longer in business. The owner was killed some time back in a plane crash. I stopped a couple of weeks ago there to inquire and then dropped by the taxidermist there in town and he was unaware of there being a processor around.
There is a gunshop in Bridgeport on 380 that is processing but I don't know anything about them or how good they are.
I took my sons buck last weekend to Clear Fork Country in Graham but this is the first time I have used them.

Hamilton Meats on 281 just South of town....EXCELLENT jap/cheese summer sausage. Eddie's in San Antone on Nacogdoches....they just started doing dried sausage this year and it is awesome. They grind in a little chili pequin with it to kick it up a notch. Their pork pan sausage is also very good. Cbar

C&C Processing in Elkhart. Greg and Lisa Chapin are some really great folks and will take care of you. This year when I picked up my doe from Greg he didn't have change for a $100 so he said to pay him the next time I was in town. I took the meat and paid him the next weekend. I am sold on Kubys, but once I took a buck to a place in Meridian, maybe Meridian Locker?? Whatever the name was, it was darn good.

Kuby's makes the best sausage a processor can make. They're just awesome at what they do.
I just went through this whole thread and didn't see anything in the Comanche area, so I will recommend Cox's Custom Processing just east of town. Base fee is $65, with sausage ranging from $1.75 per pound on pan sausage to $2.50 per pound on links of varying types. They've got a killer jalapeno and cheese link sausage and their kielbasa makes a regular appearance in my duck gumbo.
One of these days I'll find someone who can make me some andouille...

There's a guy thats good in South Coffeyville OK. Can't remember his name. He does a good job. Don't go there very often cause I butcher my own most times.

Fischers meat market is a great place to take your kill if you want to eat someone elses gut shot animals. Last year I took in 4 deer from illinois(soy bean and corn fed) and got 200# of sh_t. They even shorted me 20# of brats and 14# of breakfast sausage. Short story; I spent $1400 and still feel like I got ripped off.
This year I have a few from Illinois and will be taking my meat to Ricks Outpost off of 380. I dont know what the stuff tastes like, but I can be assured that I will get MY deer in return!
