I see a lot of posts on here for Joshua and was wondering if anyone has tried the place just west of there on 174. I'm not sure of the name but the sign out front says they do deer processing and tamales. I've been using Joshua ever since Klein's closed and haven't had any problems just thinking about trying something different next year.

anyone ever been to ye old butcher shop in plano ive had a deer there for over six weeks its been so long im not sure i want it back

I got some hunters sticks, salami which to me is summer sausage and hot and mild italian sausage from Kuby's this year. I am impressed with all of it.
I use Kornegays in Cleburne for standard stuff, makes goo djerky and jerky sticks. Real good on wild hogs and pork sausage and tamales.
Then I used Sou Tex Sausage Company at Los Cazadores this year, got tons of German Sausage and snack sticks made, they are both good.
I have used Flicks in Mansfield, they made all sorts of sausage and what they called flicks sticks which were great, but they typically had a hard time meeting you at he end or right when the season was over. They went out of business and then I got a call this year saying they were back in business, but I did not take them anything, I thought I would hear reports their first year back.
Not sure of the mame of the place in Hamilton, starts with a W............and I have had stuff from there and it was very good. Another good place is Meridian Meat Market in Meridian

I took 3 qrtrd does there on Jan 3, got the grd., the chili and the breakfast sausage back the next week (and I'm happy with it) but they haven't got the smoked or summer sausage done yet. Think I'll call them today.

I will drive 2-3-hours out of my way to use Rust Deer Plant in between eastland and cisco.Kevin and Sam do an outstandig job and take good care of your meat.They also make some of the best summer sausage youve ever eaten along with the brawts and german sausage.

Rust Plant on HWY 6 between Eastland and Cisco - Seems to be very busy during the season and I still get my deer back within a couple of weeks. Also tried JD's outside of Ranger - not bad, but Rust is closer and am very satisfied with the meat.

just had ye old butcher shop in plano. It was good i think kubys is defenitly better but it is good to change it up. Kubys also does not give a care about the packaging. Also if your every passing thru vernon the crackle barrel is good. if you try ye old butcher dont be in a hurry i got it back today and took it in dec12

we have RETRACTED our vote for the Cross Plains Frozen Food Locker...before they used to have smoked wild game sasuage, they dont do that anymore NOR do the jalapanoe & cheese german sasuage, reg or smoked...the HOT breakfast sasuage from wild hogs is still good & they still do it...not sure for how long...& we arnt happy about my doe i got back either, the grd meat was way fatty & they tenderized all my backstrap...guess we wernt specific enough

Another vote for Joshua Deer Processing. Tim Bruce has done a fantastic job on my deer for the last several years. The finished jerky is about the best I have ever had.

Tim is good. I have used him before and fish with his ex stepfather often. I like so many of them. I got more jerky and dried sausage or hunters sticks or buck sticks done this year then anything. Kuby's italian sausage is the best I have ever had. Los Cazadores has about the best german sausage I have ever had. I used to think Meridian Meat Locker had the market on jal and cheese summer sausage, but Kuby's is pretty good
Maggie...that is not a place anymore in the town of Loving. I know the guy who owned it, they hung i up last year, Now, outside of town I am not sure...but in town...nope. I am in loving every month

Well I can give a report on Ye Olde Butcher Shoppe in Plano now and I give it Got the chili meat, ground meat and breakfast sausage within 7 days and was/am very happy with it. Summer sausage took a while but is well worth the wait. Very good! Reasonable prices too. I know it's not any of that fancy stuff but I'm very happy with it. If you stop by you just as well have an elk or bison burger. That's some good eat'n right there I tell you what. PK

WELL!!!!!!! I just got back from having lunch at Ye Ol Butcher Shop in Plano, and I will have to place my vote with them. If you ever get out that way, they have buffalo and elk burgers,,,I had the elk burger about an hour ago,,AND IT IS UNBELIEVABLE!!! time for a nap,,

I agree and they are about the only german twist we have up here..they make great sausages , venison stick , and just about whatever you could possibly want...there is also another good place in west texas in Miles tx. i just cant remember the name of it...their summer sausage is the best i have ever even heard of...cap

Stay away from Flicks in Mansfield!!! We used to take all our deer, relative's deer, friend's deer, customer's deer, etc. Until a couple years ago they were fine and they did good processing, then I took a set of locked horns in to get them bleached, my cousin also had his deer there...after more than a year and many phone calls we went up there and his back door was covered with notes threatening lawsuits if he did not return their animals. A few months went by without any word and then one day he called and went through this long story of family troubles but that he'd have my locked horns done in two weeks...I said no I'm coming to get them, I got there and they were in the same bag I put them in! He hadn't even touched them, and his freezer power had been cut off and all the animals had spoiled! My cousin took his word on getting the deer done in two weeks...well 3 months later he got his deer. Long story short stay away from Flicks!!!!!

I second that. Too bad, once was one of the very best in the business. After the family issues he went down hill fast. Not only did I experiance the same issues but several friends and family members as well. I wish him the best and hope he get's back on his feet but he has sure got to learn to return phone calls.

I have used several and most are about the same some a little better than others. I tried Rendon meats this year (under new ownership) awesome. I got more meat per deer than I ever have and there Jal cheese sausage, the best I have ever ever ever had. Great ole big ole chunks of cheese and jalapena thet you can see much less taste. If you are near them, Rendon off FM 1887 on Rendon Rd. try them and have the sausage made, I promise you won't regret it.
