I just picked up my sons buck from Rusts. We are very happy with the job they did. Had some German sausage made that is very good. Have been using them for years and will continue to do so.

C&C in Elkhart, TX make the best link sausage!! Complete processing starts at $50 ($17 more if he has to be field dressed and skinned).

I'll jump on the Joshua Deer processing band wagon. Tim Bruce has done me good the past few deer I have had done there. My wife even likes it. And she used to hate deer meat. In S. Texas I would have to go with Dzuiks in Castroville. I have eaten all kinds of meat from there and have never gone past it without stopping. Try the dried sausage.

Tim at joshua does a great job but so does Lee at Lee's processing in rendon,not too far from joshua deer processing.They are both good and close to same price.

In the Colorado City area there is Seven Wells Processing on highway 208. and downtown is C.C. Quality Meats... Both are good. Seven Wells also does taxidermy

I usually skin and quarter all my deer and then let them sit on ice and bleed out some. Then I cut my steaks and roasts out. The leftover meat I will grind up myself or take to the Bellville Meat Market in Bellville, Texas. They make some of the best summer sausage and smoked/fresh sausages I have ever tasted. Their jerky and dried sausage is great too. I am debating on making my own this year or taking some meat to them. I have the jerky making down but not sure about my sausage making abilities. http://www.bellvillemeatmarket.com AB

Newly opened this year just in time for deer season. This is a first class operation with all types of hunting products to go along with a great processing facility. I especially like the drive-thru deer drop-off. Quite handy. And..the deer tamales are excellent!!!

Anyone have a processor in the Beeville, Mineral area?
I use P & R Processing in Lampasas and they do a great job.

In the past 30 years I've used several processors in North and Central Texas and by far the best I've ever used is Wenzel Lone Star Meat Company in Hamilton. They without a doubt make the best sausage I have ever had in my life. They make all different kinds of sausage. The only slight draw back is they will not take a whole deer. It has to either be quartered ot completely de-boned. They also have a deli and the sell bison that they raise on the farm outside of town. If you are ever going thru Hamilton, stop by and get some bison bacon burger patties from them. They make the best hamburgers you have ever eaten. They are located one block North of the town square.

The Deer Place in Clifton has always done everything timely and wrapped to last a while..The little chubbie sausage links are excellent...

Kuby's is good. I am trying Don Nation's place in Kaufman. If his processing is as good as his mounts, it will be a good year.

I process (cut up and package) my own deer. I've never done anything fancy like summer sausage, but I have two friends that have. One goes to Kuby's in Dallas and one goes to Syracuse in Keller. As far as summer sausage goes, my vote is definitely for Syracuse. The jalapeno cheese summer sausage at Syracuse is excellent. The cheese is firm. Kuby's jalapeno cheese summer sausage, the cheese is soft and runny, like Cheese Whiz or something, which makes it taste mushy.

Klemke's Sausage Haus in Slaton is the best on the South Plains, the Panhandle, and quite possibly the state.

I tried Jack's in Trenton and so far have been impressed. They make a good summer sausage. The prices are more reasonable than they are in Southeast Oklahoma.

Ye Ole Butcher Shop in Plano has done good on my ground stuff and is reasonable $$. I ain't got the summer & smoked sausage back yet so I can't type to that.

I've used Syracuses in Keller. Great quality but it's expensive and they sometimes misplace your meat.
