Normally don't leave the fried skin and breading on my chicken for chicken salad. Tried it tonight and it was really good!! Hard boiled eggs, celery, sweet relish, Vidalia onion, mayo, gray poupon mustard. Always make chicken salad with leftover fried chicken but never tried it with the skin on… have you done similar with leftover bbq chicken?
