You want to see what the consensus thinks is best? Take away horns/antlers. What meat hunt prices are the highest. For instance, Quail- super rare to see day hunts offered and quail leases are super pricey. Sandhills are the best semi affordable hunt for the highest quality of meat. I’m lucky in that I have a friend with access to a wood duck hole which often sees bwt and gadwall as well. Though it’s not hard to shoot 3 woodies every weekend all season long.

Red deer Bison Dove Axis Squirrel Whitetail Quail Not necessarily in that order. I can make them all taste good. My smothered whitetail is one of my daughter in law’s favorite.

Whitetail doe Pig Mallard Blue catfish (are we including fish?) Cottontail
….probably in that order. I like to eat local.

Don't think I saw it mentioned but I like wild turkey as well as whitetail, elk, young hogs, crappie, striped bass, fresh high mountain trout cooked whole in seasoned flower and butter flavored crisco, and the list goes on. My experience is if you take care of something you kill and get it cooling quickly and then prepare it well, most animals I have eaten taste pretty dang good! On the contrary if you are a sloppy or lazy butcher, the meat is usually horrible for example deer meat where you can still taste/smell a hint of that tarsal gland.

Best for me. Can’t narrow it to one. Here are some really good ones.
Tenderloins from a yearling whitetail. Pheasant Butterball fat teal breast
Not sure if I can include fish but freshwater is white perch. Saltwater is flounder.

The best I've had are dall sheep, kudu and oryx, probably in that order. On the more common list are elk, puddle ducks, black bear, sandhill crane and most wild hogs.
I'm surprised by all the pheasant fans. Maybe I just haven't cooked it right, but I always find it bland.

I left out wild turkey, years ago my mother always wanted us to get a wild turkey for thanksgiving. They were a lot better than a store bought bird.

Big Game- It’s almost impossible I feel like to beat Nilgai/Axis
Ducks- The whistlers are the best I’ve had period
Geese- SPECS out shine all others
Small game- Quail Done

Emu is better eating than you would think! Not poultry like! I’m not sayin it’s better than axis, elk or oyrx, but I’d eat it over whitetail or mule deer.

Pig, Squirrel, Rabbit, Pronghorn, Duck*, Quail, Pheasant*, Dove and that thing I ate in the amazon jungle that tried to eat me first. Pronghorn is the best venison I've had hands down. Better than elk but then I cooked the elk when I didn't know what I was doing. I haven't had the imports so I can't evaluate them.
The * caveat is that these would only make the list if I can age and pluck them. If they are gut shot the go down on the list.
No matter how high a duck flies a hammer still breaks a window.

I’ll take this rating for freshwater fish, (winter largemouth takes honorable mention) though, blue or flathead up to 12-15lbs! Past that I let ‘em breed!
